Quinoa Black Bean Burgers

Probably the best veggie burger I've made. My husband could not stop raving about these and he wants me to make more to freeze so he can have them any time! Also served them to some meat eaters who really enjoyed them too. I made them vegan by using chia seeds in water as a substitute for the egg, which worked perfectly. Other changes: I used chipotle peppers instead of hot sauce, oats instead of breadcrumbs, plus I added some cilantro and coriander. These held up great on the grill, even without using oil! Will be making these again very soon!

Authentic Enchiladas Verdes

Awesome! So fresh tasting, and so much flavor! I followed the advice of other reviewers and baked the shells instead of frying them. I used only 3 serrano peppers and removed most of the seeds. Perfect amount of spice for us. I used a rotisserie chicken to save time and it was delicious.

Black Bean and Corn Salad II

This was absolutely delicious!! The only thing I did differently was I thawed and dried the corn and roasted it in a nonstick pan for a few minutes before adding it to the salad. Eat it as is, with chips, or on a taco salad!

Megan's Granola

I cut the oil in half (used canola), left out the brown sugar, and added about 1/4 cup agave nectar but did everything else by the recipe. EXCELLENT!!!! I brought a huge jar to work this morning and it's already gone.

Pork with Peach and Black Bean Salsa

I made this with chicken instead of pork. Like the other reviewers, I added garlic and onion powder to the mean, left out the cornmeal, and added the whole can of black beans. I also added the juice from half a lime at the end and used fresh peaches rather than canned. Served over brown rice. Nice flavors!!

The Danburger - Chicken Burger with Carmelized Onions

Tortilla Soup I

Caramel Shortbread Squares

Kettle Corn

This is just what I was looking for! I made it last night and will make another batch tonight. The only change is to add some salt while it's warm. It's even better the next day! If it doesn't come out on your first try, do it again! It's worth it.

Banana Banana Bread

I was not very impressed with this. The bread never rose at all and all the bananas caused it to be very mushy. It had a very strange texture. I won't make this again.

Pizza On The Grill I

OH MY GOSH, I loved this. I will never make another kind of pizza again! The crust is so wonderful and it is not that hard to do. It tastes like a pizza you would order from an italian restaurant! YOU MUST TRY IT!

Grilled Potatoes and Onion

Wow, I am totally impressed. This was so easy and tasted delicious! None left over! I put a double layer of foil to avoid burning, doubled the butter, and added some rosemary. FANTASTIC! I'm making it again tonight.
