Fried Onion Rings

EW. I was looking for a carnival-style onion rings recipe and this sounded like a close match, but these were atrocious. Following the recipe exactly, these taste very strongly of beer, and I hate the taste of beer, so if you don't like it either, don't bother.

Chiles Rellenos (Stuffed Peppers)

muy tasty recipe. I omitted the beef, since I hate it, just stuffed them with cheese. I also used big fat jalapenos instead of poblanos, which are smaller but look a lot nicer and taste better when roasted. I am subtracting a star for the choice of cheese--mozzarella is a bit too bland. something stronger like sharp cheddar would hold up well.

Corn Tortillas

I've come to love making tortillas at home, and I always use this recipe. But I don't have a press, so here's my technique: use a plastic cereal bowl like a cookie cutter to make a perfectly round tortilla. Then just take it off along with the top layer of plastic. Really cuts down on the mess, too.

Simple Whole Wheat Bread

This was my first time making bread, and it turned out great! The flavor is nice and rich, and it's so soft. Although after mixing together the yeast and flour, it did take closer to an hour to get big and bubbly, not 30 minutes like the recipe says. I also accidentally kneaded it drier than was called for, and it still turned out fine. Five stars; I'll definitely make this again.

Buttermilk Pancakes II

definitely a keeper! these made the biggest, fluffiest, tastiest pancakes I've ever had. I made mine 8 inches across and they still turned out great. the buttermilk really makes it special. and fyi, the intro to this recipe says "fresh buttermilk" but you don't need to go out and buy some if you usually don't. just add a tablespoon of lemon juice to a cup of milk, let it sit until it gets lumpy. voila.

Best Ever Pie Crust

Perfect! I made it with butter-flavored shortening, which really made the rich taste stand out. I also like the fact that this makes a little bit more than a pie tin needs, so you can press it thick to get a nice thick crust.

Classic Fried Catfish

It's the "no-frills" part of this recipe that I have a problem with. I don't really like the flavor of fish as-is, so the coating definitely needs more spice. Garlic powder and cayenne just don't do it for me. Either that, or a beer batter, or even a crust of panko instead of cornmeal.

Golden Sweet Cornbread

I love how this turned out, the top crust was a beautiful golden color. My only problem was that it was sort of crumbly, but I realized that I had mistakenly put 1/2 cup of oil in instead of 2/3. So yeah, watch your measurements, kids. Not that this recipe needs much tweaking anyway.

Grandmother's Oatmeal Cookies

I like that these cookies have that nice cinnamony "bite" to them that distinguishes good oatmeal raisin cookies. I could have gobbled up the whole tray, they're so yummy. Five stars.

Great recipe! I've been trying to duplicate the soft buttermilk biscuits served at Cracker Barrel, and these are as close as I've gotten. Very soft and flavorful, just perfect. I made 12 instead of six and they still turned out big and fluffy.

Pumpkin Muffins II

I didn't use fresh pumpkin either, rather I found that omitting the spices and instead using canned pumpkin pie mix makes some TASTY muffins! Very big, thick, moist, and taste just like pumpkin pie. I also subsituted brown sugar for 1 cup of the sugar to give it more spice.

Cinnamon-Roasted Almonds

I got so addicted to these when I tried them at the county fair, and knew I had to duplicate them at home somehow. This recipe was exactly what I was looking for. So, so good. It also works well with pecans, I've found.

Mock Tuna Salad

The recipe doesn't mention it, but it should be pretty obvious that you have to mash up the chickpeas with a fork. That gives them a very similar texture to tuna. The color is comparable as well, although the taste isn't quite the same. I eat real tuna, but I've found this is a great way to use up leftover chickpeas after hummus or falafel gets old.

Veggie Lo Mein

I read through this and thought it sounded more like a good place to start, rather than a recipe that can stand alone well. So I added more veggies, like carrots, pea pods, broccoli, water chestnuts, onions, and baby corn, then enhanced the flavor by adding minced ginger root, which I think really made the dish, not to mention took the emphasis off the nasty-smelling oyster sauce. And it turned out absolutely faboo!!!

Creamed Spinach II

I made one portion of this just for myself, so I took a wild guess on how much, and 2/3 cups of spinach plus 1 cup of condensed soup (with an additional 1 cup water) and it turned out to be the perfect consistency. I also left out the butter and mixed in 1/4 teaspoon of Dijon mustard instead. It was PERFECT. Great recipe! Lots of room for experimentation.
