Best Baked French Fries
Finally! A cooking method that makes perfect non- floppy fries!! Very important not to skip the sugar step; set your potatoes that are in the colander inside a large bowl; you will be amazed at the liquid that comes out of the potatoes! Also very important, is that each fry lays flat as recipe states. I have done it in a hurry before and just kinda piled them all on the sheet, (cause let's be honest, if you're feeding a big family, a pan of fries laid out flat will not feed many people) and they were still good, just not as crispy. But, when you take the time to lay each one out, and flip each one half way through, they are crispy and yummier. :) Also, feel free to play with the seasonings! Italian is yummy too, or Goya. :)

Fantastic Chicken Burgers
So far, these are the best chicken burgers I've ever made. I will say though, there were a few things I didn't have, so I basically made this recipe with just the ground chicken, guacamole seasoning, (which I made) and lime juice from a bottle. I served them on sandwich thins, and probably would not have used the special bread and cheese anyways, just bc of the calories. BUT, this was still amazing! I know if I had all the other stuff it would have been over the top. That being said, this still had a lot of flavor. I have never bought guacamole seasoning so I looked up a recipe, and made about 10xs as much so I could have it ready for next time. By the way, when it says in the recipe above to use "1/2 of a one ounce pkg of guacamole seasoning" that is roughly almost 2 tblsp. ;) Guacamole seasoning recipe- 1/2 tsp garlic powder, 1/4 tsp dried minced onion or onion powder (I used powder) pinch of cumin to taste (I used 1/8 tsp) 1/4 tsp dried cilantro, 1/8 tsp cayenne pepper, 1/4 tsp salt. This is a single batch; you will need to do multiple batches to have enough. Enjoy! PS I made these with the BEST homefry method I've found, ever, also from this site. With these fries, you can use whatever seasonings you want, but if your cookie sheets are old, definitely grease pans as recipe states. I found it unnecessary to grease one of mine that was a new non stick.

Pumpkin Roll II
Very good recipe! While an avid baker, this was my first time making a "roll" cake. I could not find Linen clothes; even went to the fabric section at walmart and they had none. So I bought a piece of unbleached muslin, and that worked just fine. I kept it rolled up in the muslin aprox 20 min. It was still a tiny bit warm when I unrolled it and put the filling in, but I filled it, rolled it, stuck it on a plate, covered in plastic wrap, and set in the freezer for 2 hrs. Set beautifully. I did make a cpl tiny changes; I added 1/8 tsp of nutmeg and a little less than 1/8 tsp ginger, since those usually go with pumpkin. Also, after reading the reviews, I decided not to put the chopped walnuts in the cake, but instead mixed them into the filling.(the filling I did 3 cap-fulls of vanilla, and added about 1/4 c more icing sugar bc as written, tastes a little bland, imo) Anyways, recipe was a hit, and I will most definitely make this again. Delicious!
