Oatmeal Cookie Mix In a Jar

Reviewed: Jan. 15, 2006
Very good cookies! I used one-third of the recipe, but still used the one egg, 2 tbsp milk, 2 tbsp vanilla. I actually ended up putting in a little more milk. Also used quick-oats. Will make again!

Italian Biscotti

Reviewed: Aug. 22, 2005
This recipe is *wonderful*. I made two small changes: I ran out of butter and had to add shortening to make up, and it still came out wonderfully. Also, I added just a bit of anise seeds, which I felt added to the flavor. Delicious! I will definitely make this again ... tonight, actually!

Baked Zucchini

Reviewed: Aug. 22, 2005
Well, I slightly changed this recipe, and my husband loved it, although it was a bit too garlic-y for me. (My hubby *loved* it, though.) I did not boil the zuccini first. I just scooped out the seeds, then put the cream cheese/sour cream filling in, then baked them. I liked the texture, which ended up firm. I'll probably make this side again; however, I'm going to lay off the garlic just a bit.

Cowboy Skillet Casserole

Reviewed: Aug. 12, 2005
Ok, I really love this dish, but I changed a lot about it. Instead of baked beans, I used a can of jalapeno pinto beans. I left out the onion and bell pepper and added a can of rotel tomatoes with a small spoonful of salsa. And instead of fajita seasoning, I used enchilada seasoning. Also, for whatever reason, for step 4, I have to cook it at 400 degrees for the cornbread to cook fully. One last change: When spreading the beef in the skillet, I spread out half, then a thin layer of cheese, then put the rest of the beef down. Very good!! All that being said, I *love* this recipe!

Pasta With Peanut Sauce

Reviewed: Aug. 12, 2005
Great dish! The only change I made was to use crunchy peanut butter (since that was all I had at the time). And actually, the peanuts added to the texture of the dish.

Pork Chops and Scalloped Potatoes

Reviewed: Aug. 12, 2005
Excellent dish! Much to my dismay, I was completely out of butter, so I left it out of the broth and used olive oil to brown the pork chops. I also added more pepper and sprinkled a bit more than a dash of paprika on the potatoes. The potatoes came out *wonderfully* delicious! Will definitely use this recipe again!

Italian Breaded Pork Chops

Reviewed: Jan. 2, 2005
I really like this recipe. Instead of using garlic cloves, I sprinkled just a little bit of garlic powder into the breading. I've also used this with chicken breasts and thighs -- delicious!

This recipe is wonderful! I've made it for the past several holiday dinners -- everyone loves it b/c it's not too sweet, and it's very easy to make.

Grandman Pork Chops and Rice

Reviewed: May 4, 2004
I really liked this recipe, but I made a few changes. I used brown rice instead of white, and I used hot picante sauce instead of regular taco sauce. Very good with these changes!

Salsa Chicken Rice Casserole

Reviewed: Apr. 19, 2004
Excellent recipe -- quick, easy, tasty. I used the hot (instead of mild style) salsa, which made it nice and spicy. Also, I used Kraft's cheddar-jack pre-shredded cheese, which made it even quicker and easier.
