I followed other suggestions of bringing cream cheese to room temperature, then beating to silky smooth and then gradually adding the eggs, sugar, and vanilla. For my first time making any type of cheesecake, I give 5 stars for ease. However, I felt the taste was a little bland. The Nilla wafer crust was missing something?? I love cheesecake and the flavor of this was just ok.. Maybe it was the brand of cream cheese I used (Lucerne)?? I think next time I will add the lemon juice as suggested by others and probably do a grahm cracker or chocolate crust. Most of the tops cracked but was hidden by the cherry topping. And an entire box of Nilla wafers was WAY to much.. Maybe 1/3 of the box if you decide to go that route.
