Yummy Sweet Potato Casserole

I just made this for dinner tonight, and it was simply delicious....i guess 1,500+ people can't be wrong. I used 3 medium sized sweet potatoes, which yielded 3 cups (half of this recipe)....i did make the full serving of topping though, and i am so glad i did. The topping is what makes this dish, i think...the pecans were nice and crunchy. i usually make candied yams for Thanksgiving, but my husband says this dish should definitely replace that. Try it...you won't regret it!!

Parmesan Sage Pork Chops

declicious! i don't add the lemon zest just because i usually don't have that on-hand. everyone in the family loves it...if we were to eat pork chops for dinner every night, this it the recipe i would use each time.

Black Bottom Cupcakes I

Yum! I just have two suggestions. I ended up making a double batch of the chocolate cake part because unless you want to make 24 teensy cupcakes, that's what you'll have to do. It's also a good idea to let the dallop of cream cheese mixture settle for about 10 min before popping the cupcakes into the oven...this way, the cream cheese has time to sink into the center, making the final product look prettier.

Chicken Pot Pie III

delicious, and so simple!! i added 1 can of cream of chicken and 1 can of cream of potato...my husband so it was as good as Marie Calender's frozen pot pies. Oh, for the crust, i used the Pillsbury premade crust in the red box. The top and bottom crust turned out crisp. Will definitely add this to our dinner rotation.

Basic Baked Spaghetti

this recipe was delicious!! If you can cook pasta, you can make this meal. I substituted the ground beef for pre-cooked chicken meatballs (courtesy of Costo), and i only had mozzarella cheese on hand, so i used that instead of cheddar cheese. I also used the larger jar of spaghetti sauce (24 oz) since my family likes their spaghetti saucy. Quick and easy dinner to make on a school night. My 13 months old ate the spaghetti till his tummy poofed out. :o)
