Mosaic Dessert Bars

We just didn't like the white layer at all. My family likes jello, so we ended up just picking out all the colored cubes and eating those. Not what I expected at all.

Fiber One® Chocolate-Peanut Butter Haystacks

I was looking for a quick snow day distraction and I had all these ingredients. The kids were a little hesitant about using "mommy's cereal", but I thought they turned out really good. I will make again. The only change I would make would be to put them on smaller trays so I could put them in the freezer to set up faster.

Glazed Apple Cookies

These are really good. I used butter (personal preference) and spelt flour to make them healthier. I didn't add raisins because my family does not like them. Next time I'll double the apples and chill the dough. I did not add the glaze either, they were really good with out it.

Lemon Pie Bars

These were really good. I was surprised that I got 1/2 c of lemon juice out of 2 large lemons. Also surprising for me was the crust. It is completely a powder when you press it into the pan. Since the recipe compared it to pie dough I was expected a solid dough. It turned out just fine though. I made it in my food processor and poured the lumpy powder into the pan and pressed it down. I did have a bake 5 minutes longer for the lemon layer to set up. I made the recipe exactly as written and I thought the about of short bread to lemon was very good. I will make again and keep it this way and not a thicker lemon layer as some have preferred

I made the dough in my kitchen aid mixer and followed the recipe exactly. I think you must chill the dough (for at least one hour) to get this to turn out well. The chilled dough was very easy to work with. I rolled them out much thinner than the directions state. We really like the Solo apricot filling. We did not at all like the poppyseed- even though it is traditional and we did not really like the almond either (both Solo brand canned filling) Next time I'll buy 2 cans of Solo apricot and probably try the homemade walnut filling. Yum! Great recipe!!

Chocolate Eclair Dessert

This is really good. However, I have made it a few different ways and I really prefer it with Club Crackers, French Vanilla pudding and a different chocolate frosting...either Chocolate Glaze I from this site or a Chocolate Ganache. Club crackers hold up a little better and just taste better with the pudding. Kids especially love this dessert, but I make it for adults as well.

Blueberry Pound Cake

This is a good cake...good, but not a 5 star for me and I love pound cakes. Those other reviews aren't kidding, this is THICK batter. You practically need a ice cream scoop to get it in the pan. I did have to bake about 25 minutes longer that the recipe stated. I used frozen berrier with no problems.

Rich Chocolate Frosting

Very, very good. It tasted great and spread very well. I made this in my kitchenaid and had to beat for several minutes to get a smooth mix. Because of a dairy allergy I used butter flavored Crisco and vanilla soy milk and it was still wonderful. I made 1/2 of this recipe, which was plenty for a 2 layer, 9" round cake. I took this to a party and it got many compliments. I used the chocolate oil cake recipe.

Caramel Shortbread Squares

** Tip, cook the caramel to 245 deg F instead of trying to time it. That is the normal way to make caramel. This was good and I will try it again, but I had a problem with the shortbread part crumbling. I would not recommend doubling this until you have tried it once. This makes a lot of 1 inch squares. Also, I found this does not last long (not more than 5 days) before the cookies develop a grainy texture. I used semi-sweet because that is what I had in the pantry.

Yummy Honey Chicken Kabobs

Wonderful! I marinaded for 24 hours, used zucchini, mushrooms and a vidalia onion. There were no left overs. Yum, this will become a regular in our home. I cooked using my broiler for 12 minutes.

Flourless Peanut Butter Cookies

I was expecting more after reading the reviews. I used natural peanut butter, 1/2 c white sugar and 1/2 c brown sugar. They were okay, just not great. I won't make them again.
