Special Buttercream Frosting

World's Best Potato Salad

This was my first attempt at potato salad and it was a hit with the hubby. I cut the recipe in half, but ended up needing to use 4-1/2 fist-sized potatoes to sop up all the dressing--it was a lot. I increased the cornstarch, used the celery seed that is suggested by the author, used half green onions and half yellow, threw in some relish and a bit of bacon. Sounds like a heart attack waiting to happen...but only a few bites of this was all I needed to go along with the rest of my dinner.

Tangy Poppy Seed Fruit Salad

What can I say? It tastes like a fruit salad, which is as good as your fruit is fresh. Four stars because the poppyseeds were a bit much. Added some blueberries I had on hand for good measure.

Roquefort Pear Salad

If only it were possible to give 10 stars! Excellent as is, or can sub gorgonzola for blue cheese, and peaches instead of pears. Make a little extra dressing, marinate chicken breasts, grill. Just slice and serve on top of the salad and you've got a perfect meal.

Pumpkin Roll Cake

The cake was easy, moist and a nice balance of flavors. Needs to be baked an additional 2-3 minutes. Although the flavor of the filling is good as directed, it was far too thin for my preference--easily fixed with 1/2 cup of cool whip or whipped cream.

Big Soft Ginger Cookies

The name says it all: they're as soft as can be. While I usually like my cookies underbaked, these were an exception--I used a medium sized cookie scoop and baked the full 10 minutes.

Tropical Lime Cake

I also tried this recipe as a strawberry lemonade version by adding strawberry jello instead of lime, and lemonade instead of orange juice, and it was a hit. I baked it in a bundt pan and topped the cooled cake with coolwhip and garnished with sliced strawberries and lemon zest.

Chocolate Mint Dessert Brownies

I made the "best brownies" for the base (although that recipe yeilds only an 8x8 pan I baked in a 9x13 and reduced the time to 15 minutes), then followed this recipe for the remainder. Substituted 1/2 T of mint extract for the creme de menthe. I recommend making all of the layers at once, even though you won't assemble until the layers are each set. This way the mint/sugar in the middle has a while to meld. And place the choc chips and butter in a glass bowl and set on top of the oven while the brownies are baking, as to allow them to start melting slowly.

Taco Seasoning I

I made super yummy enchiladas from this. Use this full recipe plus a can of tomato sauce and 2 cans of diced tomatoes w/green chilis (like Rotels) and throw it in a crock pot w/a few chicken breasts. After the chicken is cooked, shred it up and add about a third of the sauce to the chicken. Roll into flour tortillas with a bit of cheese (I used sharp cheddar). Put a little sauce in the bottom of a pan, place the enchiladas in the pan, cover with the rest of the sauce, then top with cheese and bake. So good.

Caramel Bars

Others LOVED them, but I just thought they were alright. I didn't have caramels on hand so I made the chewy caramel recipe from this site and doubled this recipe--proportions were right for a 9x13 pan.

I made this one and the "rhubarb cheesecake" on this site with a shortbread crust, and the other was MUCH better. Be sure to add some chopped pecans or walnuts when making the crust.

Irish Chicken and Dumplings

This meal spends a lot of time on the stove and needs either constant attention or more liquid to prevent burning to the pan. I've also tried this recipe in a crock pot and it turned out great--just finish off on the stove or by baking in the oven once you add the dumplings.

I like to think i'm a decent cook, but when we served this at a dinner party nobody was all that fond of it. The flavors didn't jive quite as well as I'd expected after all of the rave reviews.
