Meatiest Vegetarian Chili From Your Slow Cooker

We're not even vegetarians and I've still made this chili a few times, just because we like it so much. Due to the slower cooking process, and especially if you first press your tofu between 2 plates with a heavy object on top for an hour or more, the tofu is quite meat-like. Great recipe!

Homemade Black Bean Veggie Burgers

We're not even vegetarians and I have made these several times. They are full of healthy flavor and the texture is great. I've served them on a bed of quinoa, on buns with French fries and even fried the leftovers into an omelette and topped it with salsa! They also travel very well in pita breads as room-temperature picnic sandwiches to take hiking. I do bake them, rather than grill, and haven't had any problems with them falling apart.

Beer-Baked Irish Beef

This stew fit the bill perfectly for a gathering of my Irish Jewish family. Since it had no potatoes, I decided to make tiny potato latkes (the kind from a bag), brown them in the oven until they were very crispy and serve them around the perimeter of the stew bowls as a garnish/starchy side. It was a huge hit! Great recipe.

Kalua Pig in a Slow Cooker

GREAT RECIPE! I used the Trader Joe's sea salt I already had instead of the black salt (which my supermarket doesn't carry), and I probably tripled or even quadrupled the amount of Liquid Smoke seasoning during the course of cooking. I was able to spoon a lot of the fat off the meat before serving it the first time, and the next night I was able to get a lot more off once it had been chilled in the fridge. I served it first with hot rolls, then with French fries and salad, and the third time I even tossed the meat and gravy with whole-wheat rotini and chopped roasted broccoli. It's the dinner entree that keeps on giving!

Baked Teriyaki Chicken

I've made this a few times with both white and dark meat. I follow the exact recipe and it's absolutely awesome. After the chicken has been baking for a while, I like to add some chopped fresh broccoli to the perimeter of the baking dish and then baste everything a few times during the remainder of the cooking time. Serve over steamed jasmine rice and you get healthy homemade Chinese food!

Chewy Peanut Butter Chocolate Chip Cookies

These were very good. Mine turned out more cakey than chewy, but they were dense. I used natural unsweetened PB and Nestle's chocolate-PB chips. Will definitely make these again!
