Iced Mocha Latte

I made this for my kids last night. They usually can't get enough of the icy mocha lattes that I make at home but 2 out of 3 glasses got dumped down the drain. This tasted like a instant breakfast made with water. There was no richness at all. Maybe using whole milk would make a difference (I used 2%).

Baked Ziti I

This was fantastic. I made this for the first time to serve in our Christmas dinner buffet. It received rave reviews from my guests. The only thing I changed from the original recipe was omitting the meat and onion. I used a high end jarred sauce and had no problems with a bland taste. Don't worry about it overflowing the pan, it settles down nicely while cooking. YUM!

Chicken Enchiladas II

Yummy. This was so good. My kids (2 teens, 1 preteen) actually argued over who got the last 2 as leftovers the next day. I followed the recipe almost exactly. My only substitutions were cream of chicken soup instead of cream of mushroom and 8" tortillas instead of 12". I served them with pintos & cheese, corn cakes and spanish rice. Everyone thought it was better than eating out.

Buffalo Style Chicken Pizza

This was so good. I cubed the chicken before I sauteed it in a little olive oil and threw a bit of salt & pepper on the chicken. It only took a few minutes to cook. I used Red Hot Sauce because it adds flavor, not just heat, and about 1/2 a bottle of Blue Cheese dressing (that turned out to be WAY too much!) Next time I'll try 1/4 bottle or so of Ranch. Leftover's tasted better than the first time around!

Italian Meatball Sandwich Casserole

This recipe is good, but needs slight tweaking. After reading all the reviews, I only changed a few things. I doubled the meatball recipe (the meatball/pan size ratio turned out to be flawless), substituted the green onion for 1 small yellow onion, used bottled pasta sauce (but still added the garlic and water that was called for), and used a package of (crisply toasted) Texas Toast cut into cubes instead of bread. The taste was fantastic. The only problem was….soggy bread. Next time I’ll try Texas Toast without cutting it into cubes and fill any small holes between slices with hard bread and (maybe) try omitting the water.

Michelle's Zesty Hummus-like Spread

This dip is terrible! The ingredients didn't sound like a good mix to me, but I tried it because of all the rave reviews. I attempted to salvage it by adding more ingredients, but ended up throwing it all away. If you appreciate true hummus, you probably won't care for this.

Baked Salmon II

If you’re making this recipe for the first time (as I did last weekend), be careful about some of the posted modifications. I used two that turned out to be mistakes. #1 - don’t add melted butter to your marinade! Once it’s back in the fridge chilling, it’s not a marinade anymore, it’s a blob of thick goo. #2 - if you’re using salmon fillets, watch the size - thicker is definitely better.
