Tomato Zucchini Casserole

This was delicious! It is definitely necessary to drain the zucchini and the tomatoes. I used plum tomatoes and deseeded them by giving them a light squeeze after cutting the end off and then let them dry on paper towels with the zucchini. The other absolute necessity is using fresh basil! This was fabulous. When it was done, it cut like a cake and was full of flavor. I will definitely make again.

Incredibly Cheesy Turkey Meatloaf

WOW! This was fabulous and I don't even really like meatloaf! I made this for my bf who was wanting a good meat and potatoes meal. This is what I did... I halved the recipe and used one pound of 93/7 ground turkey, added half an onion and one red bell pepper both finely chopped. I used shredded mild cheddar cheese just because that it what I had on hand and also added some additional spices such as garlic and worcestshire sauce. On top I put a combination of ketchup and A1 steak sauce. I still baked for an hour and it came out delicious! The only things I might change next time is to use sharp cheddar cheese for more flavor. Deliciously moist and flavorful. This will be my go to recipe from now on.

Zesty Slow Cooker Chicken Barbecue

Love this recipe! Very versatile and forgiving. I have made this several times and it always turns out great! I use frozen chicken (which is fine as long as you let it cook all the way) I use whatever marinades, sauces, etc. I happen to have on hand and usually add some extra peppers and onions. I put the slow cooker on high and forget about it. After about 4 hour I shred the chicken and then let it cook for about another hour. Serve over potatoes, or on a sandwich, or tortillas, whatever you like.

Easy Vegetarian Pasta

This was surprisingly good however I did add my own twist. I used penne pasta, canned diced tomatoes with garlic, bell pepper and onion. I also added some basil and Italian seasoning, red pepper flakes as well as a few green olives to give nice salty bite to contrast the balsamic vinegar. Finally, I topped it with some parmesan cheese. Turned out great, will definitely make again.

Mexican Baked Fish

WOW! Delicious and super easy! I used frozen cod filets and spread them in a baking dish. I topped them with Newman's Own Pineapple Salsa since I had a jar opened in the fridge and sharp cheddar cheese. I then baked them for about 10 minutes. I then added crushed up Fritos corn chips on top and baked for another 15 minutes. I did not have avocado or sour cream but I didn't need it. I served this with some Mexican rice and it was fabulous.

Roasted Vegetables

All I had on hand were butternut squash, zucchini, and onions. I didn't even have potatoes. I also had to substitute dried herbs for fresh. I simply chopped all of the veggies and spread them out on a baking sheet. I then drizzled them with olive oil and sprinkled dried rosemary, thyme, basil, salth and pepper on top and tossed them around on the pan to evenly distribute the oil and seasonings. This was super easy and fabulous. Will definitely make again.

Pesto Cheesy Chicken Rolls

These were pretty good. I think they need a bit more flavor though. Next time I will try to add some more spices and maybe a sharper cheese to brighten them up a bit. Also, you have to make sure you seal the chicken up really well or all the cheese and filling just runs out.

Yellow Squash Casserole

I made this recipe last night but made a few changes to it. I prefer my veggies with a little more texture to them so I didn't pre-cook the squash. I just baked it for a little longer than suggested. I did saute the onions for a few minutes so they would get soft. I used 2 cups of 2% cheese, non-fat dry milk, and whole wheat ritz crackers. I also chopped up a small tomato and added that to the veggies before baking. I did not add the remaining crumb topping until about the last ten minutes of cook time. This came out great. The only thing I will probably change next time is to omit the cracker crumbs from inside the dish (gets kind of mushy) and I would add more tomatoes or possible a can of diced tomatoes. This is a very versatile recipe.

Pumpkin Turkey Chili

I am so glad I tried this! The pumpkin makes it rich and delicious and you would never know it was pumpkin in it unless someone told you. I did make some changes though. I omitted the sour cream just because I don't like it and added quite a few more spices to jazz it up and make it more flavorful but it is a great base recipe.

Bar-B-Que Sauce

This bar b que sauce was delicious! I added a few ingredients such as dijon mustard, onion powder, paprika, and some diced onions and made bar b que chicken in keeping with the zesty slow cooker chicken barbque recipe also on this site. It was the best bar b que chicken ever!

Satiny Chocolate Glaze

This was absolutely delicious! I doubled the recipe and like another reviewer I did not have corn syrup so I substituted with honey. This did turn out more like an icing than a glaze but it was perfect and super shiny. It tasted wonderful and I will make this recipe before buying any store bought icing again.

Delicious Raspberry Oatmeal Cookie Bars

Delicious! I made this recipe with strawberry preserves instead of raspberry and sprinkled cinnamon on top prior to baking. It was wonderful. I also shortened the baking time to about 25 minutes. Quick, easy and delicious. I will definitely make again.
