Broiled Tilapia Parmesan

Made this for dinner last night. I enjoyed it very much; my husband could take it or leave it. I omitted the celery salt and added paprika. I also added some garlic powder as well as minced garlic. Next time, I would also cut back on the butter. I would certainly make this for company!

Chocolate Zucchini Cake II

This recipe is really good. My husband does not eat zucchini at all and I told him it was a "Chocolate Cake". He finished it is 2 days!!!! I shredded the zucchini, mixed the chocolate chips in and it did take 60 minutes to cook. I will definately be making this cake again - another way to get veggies into my husband!!!!

Broccoli Cheese Soup VII

Just made this for my lunch, not alot of work involved and turned out pretty darn tastey. Changes I made, added 1 chopped shallot with the broccoli to cook. Used a full block of Velveeta cheese. Didn't have chicken cube so used a pork cube. After combining both pots, ran it through the food processor. Added some cayenne pepper to finish it off. On my second bowl added some bacon bits.

To Die For Blueberry Muffins

Came home from the gym and saw the blueberries - What to do, so I decided muffins. This was the first recipe I saw and thought it looked good. They are great. I didn't put the topping on them and they were still tasty and crunchy on top. I'm sure you could use just about any fruit with the base recipe. Also you could substitute applesauce for the oil to make it healthier. Happy Baking!!!

Amariette Cookies

I love Italian cookies and as I am not Italian I had asked my girlfriend for her mothers recipe. As I was still waiting I thought I might try these. All I can say is wow! These taste exactly like the ones my friends mom makes (and yes she is 100% Italian; doesn't speak English) I didn't have any almond extract so I decided to use a liqueur. A couple tablespoons of Amaretto did the trick. Firm on the outside, soft on the inside and loads of flavor. I will definitely be making these again.

Mexican Lasagna

This was really easy to make. I couldn't find corn tortillas, so I used whole wheat. I also used a can of refried beans as the first layer on the tortillas. A can of Aylmer Accent diced tomatoes with chillies adds enough heat and fresh salsa and pepper jack cheese on top made this dish incredible. Super yummy!!!!

A-Number-1 Banana Cake

This reciepe is perfect without any changes. You can add chocolate chips or nuts if you wanted yet I like it just the way it is. One thing I did do a couple times is frost it with peanut butter frosting or a peanut butter glaze. It just added to how wonderful it really was.

Chicken Enchiladas I

made this for the first time. I made the changes as suggested by Patrick. These were amazing and I've been asked to make them again. As for the chicken, I poached it, then shredded it with a couple of forks instead.
