Mexican Cucumber Salad

Reviewed: Nov. 3, 2005
I had a spare cucumber in the fridge and found this recipe, so I thought I would try. I only changed one thing. I used one whole tomato in place of the canned. I ate some as soon as I was done making, but tried it later after letting it sit in the fridge, and it was much better. Will make again.

Red Wine Sangria

Reviewed: Aug. 1, 2005
This was just okay. I had Sangria at a party some time ago and when I saw this recipe I thought I would give it a try. I think the problem is that it had too much Club Soda. I will make again with less Club Soda.

I eat a lot of cottage cheese and I love cucumbers, so this recipe is perfect for me. Simple, light, and good flavors.

I made this with Crystal Lite Raspberry drink to cut back on the carbs and it was perfect.

This was a good quick salad. The salad dressing turned out better than I thought it would. I will make again

KJ's Mushroom Chicken

Reviewed: Mar. 29, 2004
This was easy to make and it tasted wonderful. The only thing I will change the next time is to cut back on the liquid, so that the sauce will be thicker.

Cheesy Green Bean Casserole

Reviewed: Feb. 27, 2008
I have been making green bean casserole like this for years. It is requested for Thanksgiving and Christmas dinner every year. The only difference in this recipe from mine, is that I use pepperjack cheese for a little kick.

Asparagus Quiche

Reviewed: Dec. 12, 2005
This Quiche is exellent. I sent one with my husband to work and I took one to my work for our holiday pot luck. I received rave reviews from both. Next time I will try it with spinach.

Brown Rice Salad

Reviewed: Jul. 20, 2004
This was just okay. The blend of flavors gave it a funny smell as well as a very different after taste. I don't think I will be making this again.

A Simply Perfect Roast Turkey

Reviewed: Apr. 18, 2005
I decided to make the extra turkey I had left over from Christmas and used this recipe. When I was ready to put in the oven, I realized that I did not have any Turkey stock, but I did have chicken stock on hand. Well, I used that instead and it still turned out great. The turkey was tender and juicy. I will definetly use this recipe again when preparing turkey, except I will make sure I have turkey stock on hand.

Outstanding Chicken Dinner

Reviewed: Aug. 30, 2004
This was very good, I made it with a whole cut up chicken. The only changes that I made was to brown the chicken prior to adding the broth. I also cut back on the half and half, using more broth in its place. I did this in an attempt to cut back on some of the calories. The sauce was still creamy and good. Will make again.

Chicken Fiesta Salad

Reviewed: Jul. 22, 2004
I really liked this salad. The only thing that I added was to throw in some celantro into the corn/bean dressing, just because I enjoy the flavor. I will be making again.

Slow Cooker Stuffing

Reviewed: Dec. 8, 2011
This is my second time making this recipe. There is no reason to make stuffing any other way. It is easy and is absolutely delicious. I changed the herbs in the recipe, based on what I had on hand and it did not make a difference.

Super-Simple, Super-Spicy Mongolian Beef

Reviewed: Mar. 26, 2008
I was really looking forward to eating this based on all the rave reviews, but once I did I could not figure out what the big deal was. It was okay. My husband said, "Not the one of my favorites to come out of your kitchen, will not wait to have this again".

Baked Slow Cooker Chicken

Reviewed: Feb. 19, 2008
This was very easy and turned out very good. I did use past reviewers' suggestions and added some chicken broth to bottom of slow cooker. I also cooked for two hours on high, and then turned down to low and cooked for an additional five hours. Chicken was cooked perfectly. I then took the left over drippings and broth, added mushrooms and made a mushroom gravy to go along with our dinner.

This was good. I liked it much better the next day. Definitely needs that extra day for the flavors to incorporate.

Potato Spinach Casserole

Reviewed: Jun. 20, 2005
This was good, but not spectacular. It was a little bland even after adding extra sour cream. I think I will try again, but next time I will make sure to make the mash potatoes my way before adding spinach.

Sausage Stuffed Mushrooms II

Reviewed: Aug. 2, 2004
I used hot Italian sausage and did not even bother to brown prior to putting in mushroom cabs. This way the mushrooms are softer, the way that I like them. Added grated cheese on top and baked until done. Served at a party this weekend and everyone ate them up.

Picnic Fried Chicken

Reviewed: Apr. 19, 2004
Wow! This chicken turned out perfect. I have tried to make fried chicken before without any real success. This recipe was easy and everyone ate it up. I did change one thing though, I used buttermilk instead of the regular. I also added Paprika as someone else suggested. I will be making this again and again.

Fudge Brownies I

Reviewed: Apr. 5, 2004
I only had a 9x9 pan, so I just baked them a little longer than the time stated, since it meant they would be thicker. They were still chewy and good. My family said they were perfect. This is my new go to recipe for brownies.
