Maple Ginger Cake

Wonderful cake. Moist and flavorful. I followed exactly except used a Bundt pan and baked for 45 minutes. Frosted with a maple-cream cheese frosting that I made very soft and sort of draped over the cake. Then I grated some hazelnuts and chocolate dust over the top - beautiful presentation! Thanks for the great recipe! OH. I used butter instead of shortening, too.

Creamy Rice Pudding

Delicious, creamy rice pudding. Exactly what I was looking for. I added the sugar near the end of the cooking time and adjusted to taste - I ended up adding about an extra tablespoon. The rice and raisins remain nicely suspended. I stirred a chopped banana into a couple of the portions. THANK YOU for the wonderful recipe!

Lemon Cream Cupcakes

Excellent crumb to these light, tender cupcakes. The frosting is nice and lemony. I got 30 cupcakes in my paperlined tins, and doubled the frosting recipe. Ratios were just right. If you like a very lemony cake, increase your zest and add lemon extract. The lemon flavor of the cake itself is quite delicate, appropriately enhanced by the more assertive frosting. Eager to try this as a cake next time, and will fill with a lemon filling. Will post soon.

Sour Cream Raisin Cookies

Excellent, tender cookie with good keeping qualities. I made as suggested, except I rolled them in the cinnamon sugar mixture. Oh. I guess I added an extra 1/4 c raisins, too. Wonderful, old-fashioned recipe.

Cherry Cake

This cake recipe was exactly what I was looking for. I used Door County, WI, sour cherries, from frozen. It turned out perfect - with a moist, somewhat dense texture that shouts 'NOT CAKE MIX!' I made a cream cheese cherry frosting using the reserved juice, rather than the cherry sauce. Delish! Going in my permanent file.

Sour Cream Blueberry Muffins

Excellent, quick choice for using up baking mix. I followed the recipe exactly, made it 1 1/2 times and split it between 2 8x8" pans for a morning 'kucken'. I mixed the dough, put it in the buttered pans, sprinkled a pint of thawed blueberries over the 2 pans, sprinkled a handful of sugar over each and baked at 375 for about 25 minutes. Got rave reviews from my family.

Treasure Cookies

Lovely cookie! I chose it because I needed cookies for Sunday at church, and had no eggs on hand. I used the smallest Pampered Chef scoop, and the recipe made 7 dozen cookies. A great combination of crisp and rich. I will make this again. Only substitution I made was walnuts instead of pecans.

Orange Roughy with Citrus Sauce

Excellent recipe! Very easy and extremely tasty. I made exactly as stated with two exceptions - fresh cilantro intstead of parsley and 1/2 T of very thinly sliced red pepper for color. OUTSTANDING recipe - try it!

Peanut Butter Bars I

Oh! My! Gosh! I will never look at a box of graham crackers that same again! I am truly sorry I found this recipe!!! It is SO GOOD! Made with a natural refrigerated peanut butter, half the recipe in an 8x8 pan. WONDERFUL~!

Excellent recipe. Couple recommendations. Put your fish in the pan, measure in enough water to cover, and then adjust the amount of sugar and salt proportionately. And watch the broiler carefully to avoid overdone fish. Excellent recipe. Thank you! We sprinkled two of our filets with cajun seasoning and they were the BEST!

Spicy Red Bell Pepper Soup

This was GREAT! I doubled the spices, since we like things hot, and used brown rice. Served with some toasted rye croutons and a tiny wedge of chili-lime gouda for garnish. Raves from my guests!

Rempel Family Meatloaf

I am SHOCKED! I am a 49 year old veteran meat loaf HATER! It is a meal that makes me shrink as few others do. BUT I have a husband that likes meatloaf, so every 5 years or so I cringe and stir up a batch, figuring I can just lose weight that day. WELL! This meatloaf is SO good! The only change I made was to add 4 slices of crisply cooked and crumbled bacon before baking, and topped with a thin layer of shredded cheddar. AWESOME recipe! My family will now enjoy meat loaf as often as once per month! Thank you, Connie!

Beef and Pepper Pie

I had a puff pastry made up, so used that. Used 3 fresh red peppers and sauteed them a couple minutes at the end of the browning of the beef. For as simple as this recipe is, it was very tasty. Thank you!

Irresistible Irish Soda Bread

Great recipe! After reading all the reviews (whew!) I decided to try a couple changes. I plopped 1/4 c scoops of this nice, thick batter onto baking stones and so the bread bacame little round 'soda buns'. I also used the butter/buttermilk mixture from 'Amazingly Easy Irish Soda Bread' and brushed the tops of my 'soda buns' twice when they were near the end of their 20 minute baking time! They were delicious and will be the base for our 'Make your own Irish Sandwiches' at a college ministry group tomorrow night!

Great recipe. I cut the sugar as others suggested, and knew there was NO hope for hubby to like it if I added the cranberries and nuts, so left them out. Turned out GREAT anyway!

Coconut Curry Cabbage

My husband and I loved this recipe BUT I must admit we love INTENSE food. I used 4 cloves of garlic and 1/4 c habanero salsa. I also added 1 c julienned celery and deglazed the pan near the end with 1/4 c dry white wine. We served it with haddock in a lemon-cream sauce. GREAT easy, healthy supper. Thank you, Sonia!

Teriyaki Sauce and Marinade

Oh, for ten stars! Wonderful, wonderful recipe - never had teriyaki sauce this good! We followed the recipe exactly. We found the mirin and the rice vinegar in the natural foods section of our grocery store. DO use all the garlic and DO use fresh ginger! Thank you, Celeste! (I HAD to use that beautiful name! My daughter is Genevieve!)
