Soft Peanut Butter Cookies

I made these exactly as directed, and they were thick and fudgey with an excellent not-too-peanut buttery flavor. You could taste the cookie dough flavor, too, which is exactly what I wanted. If I wanted a mouthful of pb, I'd grab the jar and a spoon!! These cookies were a hit at our party, and the leftovers went home wrapped in napkins, tucked in pockets :)

No Bake Cookies III

This is the recipe I have used for years, and no other recipe hits the spot like this one. I agree, you don't start your 60 second count until the hard boil begins, and be sure to use a stiff peanut butter. Some all natural pb, for instance, is a very thin consistency that prevented my cookies from setting. So don't be me. I had to refrigerate my cookies to get the pb to harden. Not that this prevented us from eating every last one!!

Healthier Banana Crumb Muffins

Wonderful, flavorful muffins! I added a bit of quick oats to the crumb topping, but the rest is exactly as directed, and we could not be happier! I got 12 muffins from the recipe, though, not 10. Yay bonus muffins!

I followed the recipe exactly, and it is amazing. Luckily I like a sweeter applesauce though. Knowing your apples is crucial to get the sugar right!

Chicken Tortilla Soup IV

Great recipe! I baked my tortillas, though, and I threw all my ingredients into a crock pot because of time constraints. Turned out delicious! It is a mild recipe, so be sure to add some extra heat if you like a little more kick.
