Basic Ham and Bean Soup

This was one of the best bean soup recipes I have made. It tasted a little bland so I added a tablespoon or two of tomato paste I had left over. That did the "trick"!

Zucchini Cornbread Casserole

The only thing I did differently, was I didn't add salt. I really liked this and I believe it would have been better had I not put it in the "wrong" dish. I did as others said and that was to salt the grated zucchini and put in a colander. There was a lot of liquid when I squeezed it out. The directions said to put it in a 2 qt. baking dish and bake for an hour, which I did except I used an oblong dish, not round, and that made it too dry. I had it timed for 50 min. to coincide with another dish and I think it would have been done in 30. Next time, I will use a round dish

Creamy Horseradish Garlic Spread

High Temperature Eye-of-Round Roast

This was perfect! I haven't cooked eye-of-round roast for quite some time because it has always been dry. Not this time. I just rubbed in some salt and garlic pepper and cooked exactly as the recipe stated.

Peppered Shrimp Alfredo

This was soooo good! I rarely try the recipes that call for alfredo sauces, butter, heavy cream, etc., but we are 82 years old and I thought what the h...! I used 1 less tbsp. butter, 1/2 red and 1/2 yellow pepper & button shrooms 'cause that's what I had and 3/4 tsp cayenne. It was perfect. Good enough for entertaining. Also, have enough for another meal, which is great for me.

Mouth-Watering Stuffed Mushrooms

Turkey and Quinoa Meatloaf

My husband & I were pleasantly surprised by how good this was. He was surprised it was turkey but he is not a picky eater. I was out of quinoa so I went to Trader Joe's to get some. Most grocery stores don't have it and the health food store is very expensive. I was glad I did. I used only 1 tsp sea salt and didn't use brown sugar for the topping. We don't care for sweet toppings for anything. I just used a little tomato paste, worcestershire sauce & water and spread on top with a pastry brush. Will definitely make this again.

Hungarian Mushroom Soup

This was excellent. I used only 1 tsp. dill weed and 2 tsp. paprika, added 2 minced cloves of garlic with the onions and used 1/2 & 1/2 instead of milk. I don't normally vary from the original recipe unless there are a lot of changes from reviewers, but in this case I did and was pleased with the outcome.

Pasta Primavera with Italian Turkey Sausage

This made a ton (served 2 of us, had daughter & son-in-law for leftovers and they took leftovers home to our grandsons). The men in family don't have small appetites either. Everyone thought it was great. Didn't have fresh tomatoes but used 2 cans diced with juice. Used part red, yellow & green peppers, mushrooms, red wine & some half & half to make enough liquid. Didn't use bouillon. Added parmesan at table.

Shrimp and Feta Cheese Pasta

I gave this only 4 stars because of the changes I had to make. Since other reviewers said it was not enough sauce, I used 12 oz. angel hair. I used 1-1/2 lbs. cooked shrimp so I added it at the end. I used more wine to cook the garlic & added 1 14.5 oz. can diced tomatoes, juice and all, 1/4 tsp. crushed red pepper and 1 cup fat-free half & half. Used 1 Tbsp. fresh basil & 1/2 tsp. dried oregano and more wine. Had only a 4-oz. pkg. feta cheese w/garlic & herbs that I added with the shrimp. We added fresh parmesan at the table. My husband asked twice what the name of the recipe was because it was so good. Will definitely make again.

Chris' Bay Area Burger

Was looking for something a little different than the plain old burger. I used ground round, which is usually dry, and the only thing I did differently was to add a minced green onion and I used about 1 1/2 tbsp of olive oil. We like our burgers big so I made only 2 out of the recipe. My husband said to give it 5 stars.

Rotini with Chicken

This recipe sounded interesting. Had I known the "seasoned rice vinegar-roasted garlic" was sweetened, I wouldn't have tried it. The stewed tomatoes also have sugar. I don't like "sweet" entrees. I did add mushrooms w/chicken, onions & garlic, & some dry white wine to the tomatoes. I might try this again with regular rice vinegar and regular diced tomatoes.

Italian Sausage Soup

Very good. Used sliced chicken Andouille sausage because I didn't have Italian & added onions & mushrooms with the garlic. Used one yellow squash & one zucchini, and more spinach than called for. For leftovers, added a can of black-eyed peas. Will definitely make again using Italian sausage.

Sensational Salmon Loaf

This was tasty but a little dry. I decided to use an 8x8 dish rather than 9x9 and am glad I did. Maybe I "pressed" too much but it was still rather thin. I will try again but use either less crackers or more liquid.

Tangy Dill Potato Salad

Have made this twice and it was well accepted. Did as others said and put the Italian dressing on while potatoes were still hot. Had to cut potatoes in bite-size pieces because potatoes were large. Also added eggs & celery. Put all together then added mayo mixture. My 43 yr-old son still likes my "original."

Boudreaux's Zydeco Stomp Gumbo

This was really good. I took the advice of others and cut down some on the broth. After cooking for over an hour the celery & onions still weren't done so will precook in microwave the next time. I added okra (which is a requirement for gumbo) and more chicken, used 13 oz. Cajun style Andouilles sausage & 2 lb. shrimp. Will definitely make again!

Grandma's French Dressing

I just tried this on a spinach salad and it was great! I don't like dressings with sugar, or at least very little sugar, so my husband I both say this is a keeper. Now we won't have to eat all those preservatives in bottled dressings. Thank you Stephanie!

Shrimp and Mushroom Linguini with Creamy Cheese Herb Sauce

Gave it 4 stars because I made a few changes. Didn't have quite 8 oz mushrooms so used some reconstituted dried shiitake mushrooms. I added 2 chopped green onions & 1/2 chopped jalapeno pepper to the mushrooms. Also used 2 T butter & 2 T olive oil. Used 12 oz. shrimp & 6 oz. cr. cheese & a dash of cayenne. Turned out great!!
