Rempel Family Meatloaf

This is the best meatloaf out there! I have eaten a lot of good meatloaf but nothing stands up to this. Every one of my 5 children love this and that is saying something. The recipe is wonderful as it is written but for an even added touch of pizzaz make the glaze in Delia's "Glazed Meatloaf II" recipe and use 1/4 cup of it for the ketchup in this recipe and then use the remainder as a glaze on top per the instructions in Delia's recipe. WOW!

Baked Pork Chops I

My whole family loved this recipe! The only adjustment made was to add a can of Golden Mushroom soup to the ingredients which allowed us to have plenty of DELICIOUS gravy for our mashed potatoes. A couple of "happy accidents" that happened were, I burned the chops while "browning" them and I put the soup mixture in the pan before ever putting it in the oven. My burners must not be well calibrated because after 3 minutes of browning at "medium-high" the house was full of smoke and the chops were black on one side. I immediately turned the burner down to "medium", turned the chops over and after 50 seconds the other side was starting to burn. I did not want to waste the chops so I kept on with the recipe and baked the chops with the soup mixture for 1:05 and they turned out absolutely delicious! This recipe will definitely be a frequent flyer in our home but for now on I will brown at "medium" and check them frequently.

Stuffed Mexican Peppers

These were great! Even our 9 yr-old daughter, who was initially afraid to try them, ended up asking for seconds. The only significant changes we made were to increase the rice to 3/4 cup and we added about 1/2 cup of black beans to the mix. Yummy!

Cheesy Potato and Corn Chowder

This soup has been a winter staple in my family for the past two years. Add a few slices of bacon cooked crisp and chopped to the soup for a little extra pizzaz. Yummy!

Black Bean and Couscous Salad

Colossal Cookies

I started making and eating these cookies 34 years ago when I was 14 years old! It is great to see them on AllRecipes.com. These cookies are great if made correctly (DO NOT ADD FLOUR to these. It will be a whole different final product)! In 34 years I have never seen one of these as big as a dinner plate. The best way to make these are to drop by heaping tablespoons(serving, not measuring) or from 1/4 cup measuring cup (packed). Then only slightly press them down to NO LESS than 1/2 original heigth. Also for variety try M&M's (plain or peanut) instead of chocolate chips and/or chunky peanut butter instead of creamy. The raisins are also a good idea. You will LOVE them!!
