Baked Omelet

I made this for dinner a few times already. My husband & guests loved it. Each time I decided to alter the recipe a little - using Gruyere instead of Cheddar or shallots instead of onions. I also sprinkled it with parsley for some color. Yum!

Honey Crunch Pecan Pie

Listen to the rest of the reviews: You really should use a 10" pie pan. The filling will overflow the smaller crust & you don't want to waste any!

Roasted Red Pepper Lasagna

My husband & I loved this. Don't let the Quickness Rating deter you...you can always roast the peppers earlier in the day. I will make it again, but next time use 6 instead of 4 peppers.

Beefy Spanish Rice

My husband loved it - I thought it was good. However, the rice seemed a bit undercooked to me, so I recommend adding more water. It also has a more tomato-y than spicy taste. Keep this in mind and adjust accordingly.

Healthy Turkey Loaf

I was really impressed! This meatloaf was very tasty - who could believe it was healthy as well? The best part was that my 2 yr old son gobbled it up. Definitely a meal for the whole family. (BTW - I substituted ground chicken.)

Basil Shrimp Fettuccine

Yuck - flavorless. We even tried to spice it up a bit, but the flour seemed to have taken all the great taste away from the shrimp. What a waste of good ingredients.

Zucchini Coconut Loaf

Very nice and easy. My 3 year old enjoyed the simple preparation & we both enjoyed the results (especially since I substituted chocolate chips for the currants). It is also possible to reduce the sugar without losing any of the taste.

I thought it was great - just be sure to use really good quality mozzerella, oil and vinegar (it won't taste as good if you skimp). Also good if it soaks overnight.

Avocado Shrimp Bisque

I pick the recipes, my husband cooks. For this one he said, "This is the best soup I've ever made". (And we've done quite a few!) Just follow the advice of others and make sure to puree the mixture. We also added a bit of seafood seasoning in addition to the salt and pepper. Yum!

Red Pepper Soup

Very nice. I've made it a few times already & have to say the color is lovely with red or yellow peppers, but DON'T try it with green or cheat by adding a few green ones to the mix as the color will turn you off before the first spoonful.

Oven Pot Roast

We live in England, where the Sunday roast is a serious tradition. Our guests said this was one of the best roasts they've ever had and shamefully asked for bread to mop up the gravy!

Colleen's Slow Cooker Jambalaya

I gave it a 3, my husband a 4. Spiciness is a matter of opinion & I thought it a bit too hot. (My 4 year old's tastebuds thought we were playing a cruel joke on him.) My advice is to take the spice amounts into consideration & you will prepare a good meal.

Very good, though a bit too sweet for our liking. Our first attempt used HALF the sugar and was still sugary(if you wanted more than 2 pieces). More of a treat than breakfast.

Grandma Johnson's Scones

We forgot the cream of tartar. Not sure how this changed the recipe, but while they were quite crumbly the taste was excellent. The proportions are quite big for young kids. Next time we'll cut into 24 wedges.
