I thought it was great - just be sure to use really good quality mozzerella, oil and vinegar (it won't taste as good if you skimp). Also good if it soaks overnight.

Zucchini Coconut Loaf

Very nice and easy. My 3 year old enjoyed the simple preparation & we both enjoyed the results (especially since I substituted chocolate chips for the currants). It is also possible to reduce the sugar without losing any of the taste.

Basil Shrimp Fettuccine

Yuck - flavorless. We even tried to spice it up a bit, but the flour seemed to have taken all the great taste away from the shrimp. What a waste of good ingredients.

Healthy Turkey Loaf

I was really impressed! This meatloaf was very tasty - who could believe it was healthy as well? The best part was that my 2 yr old son gobbled it up. Definitely a meal for the whole family. (BTW - I substituted ground chicken.)

Beefy Spanish Rice

My husband loved it - I thought it was good. However, the rice seemed a bit undercooked to me, so I recommend adding more water. It also has a more tomato-y than spicy taste. Keep this in mind and adjust accordingly.

Roasted Red Pepper Lasagna

My husband & I loved this. Don't let the Quickness Rating deter you...you can always roast the peppers earlier in the day. I will make it again, but next time use 6 instead of 4 peppers.

Baked Omelet

I made this for dinner a few times already. My husband & guests loved it. Each time I decided to alter the recipe a little - using Gruyere instead of Cheddar or shallots instead of onions. I also sprinkled it with parsley for some color. Yum!
