Taco Dip

A great starter recipe for your own interpretation. I don't use lettuce ( it tends to get soggy) and I use green onions instead of white for less bite.

Excellent flavor. Used Fresh Mushrooms instead of canned. Would've liked it to be more saucy.

Foolproof Rib Roast

Reviewed: Dec. 27, 2011
We doubled the recipe, which called for (2) 5.5 lb roasts. So, we bought (1) 11 lb roast. Perhaps it was the size of the single roast, but it took little over an hour longer than recipe stated to reheat. Next time we'll probably leave the oven on 200F instead of turning off.

Nana's Acorn Squash

Reviewed: Nov. 26, 2011
We found it took longer than 20 minutes to microwave. Good idea to pierce skin. We also always add cinnamon (or cinnamon sugar to cover both).

Turkey Breast with Gravy

Reviewed: Nov. 26, 2011
So simple and juicy! Check occassionally, ie when basting/injecting, to make sure water does not completely evaporate. Add some, if necessary. We did not make gravy, so let turkey rest covered in aluminum foil for 10 minutes before serving.

Pumpkin Wheat Honey Muffins

Family approved! A very heavy muffin b/c of the whole wheat. Definitely not for dessert after dinner, but a filling breakfast on it's own. Add milk/juice & you're good to go.

Chunky and Creamy Potato Salad

Very, very good! We scaled for 20 servings and used fresh broccoli florets and turkey bacon. Don’t add salt & enjoy!

Mozechilli Casserole

HUGE portion! Slight additions for flavor: We browned ground beef with a bit of onions & added dried Italian spice mix. Our family of 4 will be eating this for 2-3 meals (with sides of salad & biscuits).

100-Calorie Pumpkin Pie Tartlets

Reviewed: Nov. 26, 2010
Not quite sweet enough for our liking. And I usually reduce sugar in most of the desserts on this site! Admittedly, the first taste was the day we made them & the second, while seemingly better tasting, was after overnight refrigeration.

Salmon and Spinach Fettuccine

It all sounds good on paper, but was just a bit too much when all mixed together. We love all the ingredients separately so it was unfortunately a disappointing recipe.

Summer Vegetable Salad

Nice and simple. I used half the oil and vinegar and still had enough to marinade. The julienned green pepper slices were too big. Keep things bite size.

So simple and good. Great first kabob for kids. We used canned pineapple and the glaze from the Kielbasa Apple Kabobs recipe on this site (as we made both). Excellent!

We actually liked the grilled granny smith apples! Quick tip: Instead of using the stove, heat the glaze in the microwave until it begins to thicken.

Golden Pork Chops

I stopped eating and cooking with condensed soups years ago, when I found out the high sodium content. But canned soups have gotten healthier and I have fond childhood memories of Campbell's recipes. This was good, easy comfort food. My husband was happy, but my kids wouldn't try the gravy/sauce. Of well, shows times really have changed.

We used whole wheat flour and an extra banana. Mashing bananas almost to a paste consistency is definitely recommended. Rich and practically healthy for you!
