Brisket with BBQ Sauce

I cooked a four pound brisket using this rub. I used the slowcooker( 9 hours on low, turning once) and finished it off in the oven. Rather than make my own sauce, I used Stubb's, a favorite of my friend from Texas. It was great accompanied by a green salad, tater salad and texas toast. Take it easy on your day off, was my feeling.

Mark's English Sausage Rolls

You made my British husband's Christmas this past year. He couln't keep his hands off them. I confess that I too grew fond of these when I was living in England, and was glad to have your recipe. We made two batches, and the second time precooked the rolled sausage in the mircrowave to get rid of some of the fat. Worked beautifully.Thanks.

Butternut Squash Risotto

I played around a bit with this one, and it was great. To make it completely vegetarian, I used veggie stock. I microwaved the squash cubes until tender, which worked out fine. I also added about a tablespoon of currey powder while stirring for a litte kick. We just had the leftovers for lunch.

Salmon, Rice, and Fried Tomatoes

This was very tasty, using leftover grilled salmon. However, i found the timing off on frying the tomatoes. Perhaps it should be 5 minutes total, which is what I did. Anything more would have been burned...2 1/2 minutes on each side was just right.

Roasted New Red Potatoes

My husband is a Brit and loves his roasted potatoes. He loves these, and I am happy to have a recipe so simple and so good. We had them this weekend with roasted leg of lamb, brussel sprouts and carrots for typical British roast dinner. I cooked them at 375 for about 1 1/2 hours with the lamb.I have also made them with roast chicken and beef and even grilled salmon. I vary the cooking time with the size of the potatoes. Thanks.

Teena's Spicy Pesto Chicken and Pasta

Thanks, Teena for a quick and very tasty chicken breast and pasta dish. For three servings, I adjusted the recipe accordingly and added a jar of marinated and drained artichoke hearts, halved. I also added a splash of white wine instead of more pesto for additional moisture.I only had high fiber, white penne pasta and it worked great.Yum. Next time I am going to try it with shrimp.

Seafood Marinara Pasta

I made this for dinner last night using all mussels because they were on sale. Instead of crushed tomatoes I used chopped romas from my freezer and some extra paste. I also added a few crushed red pepper flakes. Hubby says it was the best seafood marinara he has ever had. Next time I will use shrimp. Excellent recipe for cold, fall night at home.

Turkey and Quinoa Meatloaf

I tied this tonight, using Stubbs BBQ sauce with a bit of hot sauce instead of the paste, brown sugar, etc. It was good and made generous servings. However, I think I will stick to adding oatmeal, not quinoa. It's not as expensive and time consuming. Thanks for sharing it, though.
