Chunky Corn Chowder (Vegan)

Almond milk in place of soy makes for a creamier broth, plus a tablespoon of corn starch. The trick I use to add a kick is Old Bay seasoning...AWESOME!

Hariton's 'Famous' Vegetarian Casserole

Made a smaller batch for my family of 5 1/2. 8 B-sized red potatoes, 2 small eggplants, 1 large zucchini, 2 tomatoes, 1 small onion, 1 cup mushrooms, kept the garlic about the same...small can tomato sauce and 1/3 cup olive oil. Boiled potatoes in advance, then put them in the pan as layer one and sprinkled a bit of garlic salt on top. Mixed the oil, tomato sauce, and herbs together and tossed the other veggies with that before adding to the pan as layer two. Baked at 375 for 1 1/2 hours and it was awesome!

Tortilla Rollups I

This recipe is a solid foundation, but a bit bland on its own. I used jalapeno cheddar wraps, and for the filling I only used about 1/2 cup salsa. I added 1/2 block of shredded sharp cheddar cheese, 1/2 tsp cumin, 1/4 tsp chili powder, 2 tbsp sour cream. The modified ones were awesome!

Delicious! Used sliced smoked cheddar instead of shredded, but otherwise I did everything as directed. Even the kids liked these...well, all but one :)

Veggie Meatloaf

I used a 6 oz can of tomato paste in lieu of the eggs to make this vegan. Also added 1/2 cup Italian breadcrumbs, and 2 tablespoons Sweet Baby Ray' s BBQ sauce to the mixture and baked in a 9x13 pan. For the topping I used equal parts ketchup, mustard, and brown sugar...yum!
