Shrimp and Peanut Butter Noodles

I used balsamic vinegar for the chinese black and brown sugar in place of the white. I stir-fried my shrimp in a wok, removed and then stir-fried broccoli, red onion, sliced vertically and red bell pepper, sliced vertically. I used soba noodles in place of the udon. Added back the shrimp and noodles into the wok and then stirred in the sauce. I used less noodles than the recipe called for because I was worried that I didn't have enough sauce to coat everything. I did add red pepper flakes to the sauce as we like spicy food. It was yummy and quick to fix. This is a repeater for us.

Best Tuna Melt (New Jersey Diner Style)

Wonderful. I did lower the calorie load by using mostly Greek Yogurt mixed with a little light mayo and reduced fat cheese. I am sure we couldn't tell the difference from the full-fat one.

Elegant Penne with Asparagus and Shrimp

I added a can of diced tomatoes, partially drained, sliced mushrooms and a red bell pepper cut in 1 inch pieces matching the asparagus. This is a definite repeater in our house.

Chickpea Salad with Red Onion and Tomato

This is delicious and so healthy. I am always looking for ways to get more fiber in our diet. I did add more lemon as I like that more tart lemon flavor. Next time I make this I will add tuna and corn as some have suggested and make a main dish salad for dinner. I live in Texas so the suggestion for half cilantro is out right now. Hopefully I can add some of that in the future.
