Roasted Garlic Mashed Potatoes

Good recipe but bland, needed some tweaking...definitely need to add a lot of salt/pepper for flavor and a SECOND full head of garlic, the flavor is not overwhelming at all. I added one at a time just to make sure it wasn't going to be a disaster! Also looked up a few other mashed potatoes recipe and the ingredients included 4oz of either sour cream of cream cheese for a creamier texture...so I ended up adding that, DEFINETLY helped a lot! You can make this healthy by using "I cant believe its not butter" butter...and fat free cream cheese like I did, my picky boyfriend ate it!...this recipe is a keeper with the minor tweakings! ENJOY :)

Strawberry Trifle

YUM YUM YUM!!!!! So I made a few changes but still giving this recipe 5 starts because IT IS SO DELICIOUS! I made angel food cake from a box in a 9x13 pan so it was easy to cut into squares. I used 1 packet of fat free/sugar free vanilla pudding and 1 packet of fat free/sugar free chocolate pudding. I put them in the fridge to chill while the angel food cake was cooking in the oven. (PS instead of using water for the angel food cake, I used skim milk, it gives it such a soft nice consistency!) I used only an 8oz can of cool whip. I mixed half of it with the vanilla pudding only, and used the rest as the last layer of my trifle for a nice presentation! First layer diced up angel food cake, second layer vanilla custard, followed by my fruit (strawberries, blueberries and banana), then start again with angel food cake layer and then CHOCOLATE pudding. Put in the fridge for about 15 minutes. Take it out and spread the remaining half of cool whip, and make it look pretty with strawberries, blueberries and fruit of your choice! **Tip: to make sure your bananas don't turn brown after you dice them, put them in a bowl of orange juice for about 5 minutes before layering them into your cake! Enjoy, this recipe is AWESOME and very easy to change up according to your liking! =)

Healthy Banana Cookies

I'm giving this recipe 4 stars because I had to make some adjustments to make this a 5 star recipe. I made this recipe TWICE and think I have finally perfected it: 1) Instead of oil, use 2 lunchable size applesauce (per other reviewers, thank you!) 2) use 2 cups oats and 1 cup low fat granola for more crunch, because this cookie is very soft. 3) for my personal preference, I added a diced apple, raisins, 1/4cup walnuts for more flavor and texture since I don't like dates. 4) bake at 350 for 30 minutes...I shaped my cookies into normal sized cookies, so they needed longer baking but trust me its worth it! Overall, this recipe is a great foundation and very easy to tweak to your own liking! Love this recipe, I will always use it :) My boyfriend who doesn't like to eat "healthy" actually devoured these cookies!

B and L's Strawberry Smoothie

I slightly tweaked the ingredients...I added low-fat vanilla yogurt rather than plain, and only 1/4 teaspoon of sugar. You get enough sweetness from the strawberries and vanilla yogurt!! I also only added 1 teaspoon of vanilla extract (since I used low-fat vanilla yogurt). I added 9 strawberries and 2 bananas and turned it into a strawberry-banana smoothie! YUM!! :)

Mexican Layered Dip

I added taco meat to this (use 1lb ground beef, sauté it according to taco mix directions and add taco seasoning packet. Put it in the fridge about 5-10 minutes before layering in your serving dish). While the meat is in the fridge cooling down a little bit, I added 1/2 tablespoon taco seasoning to the refries beans after warming it up and about 1tbs to the sour cream (I used 16 oz of LIGHT sour cream). First layer of my 9x13 dish is —refried beans, followed by later of taco meat, followed by layer of the sour cream and cream cheese mixed, layer of green onions, tomatoes, cheese and black olives. I didn’t use the guacamole because we don’t like it. So make sure you get 2 packets of taco seasoning (1 for meat, and about ½ of the second one for the refried beans and sour cream). I definitely recommend using 16oz of sour cream instead of 8oz. I used fat-free refried beans and low fat sour cream--NO ONE could even tell! Overall Great recipe!

Creamy Au Gratin Potatoes

When making the cheese sauce, add garlic powder (couple smacks on the back), salt and pepper. I used 3 russet large potatoes USE PAM ON THE PAN or it will stick!! I added garlic powder, salt, pepper in the cheese sauce and only a handful of cheese. I HIGHLY encourage you to dice the onions, don't leave them as rings. When you begin to layer, begin with one layer of cheese sauce, followed by a later of potatoes, layer of diced onions (all or 1/2), layer of cheese, then layer of sauce. REPEAT. don't add salt to every layer because the cheese sauce has enough salt already. just add pepper to each potato layer. End it with a cheese topping. Also it took me over about 1hr 50 mins of baking in the oven. 400 degrees covered for the first 1:30 minutes and uncovered for 20 minutes to get a nice browning on the outside and get the cheese sauce to thicken nicely. (PS I USED REDUCED FAT SHARP CHEDDAR CHEESE---WORKED AWESOME!) This was a major hit with no left overs! No one even knew it was reduced fat cheese. =) I will most definitely be using this recipe more often!!

Asparagus Side Dish

Good overall, but it lacked a little salt. I also added diced garlic for extra flavor. Only reason I gave it 4 stars is because of the lack of seasoning. On a side note: Don't let it steam more than 10 minutes, it will get too soft, almost mushy like.

Chicken Breasts with Chipotle Green Onion Gravy

YUMMY! This is definitely a must try for anyone, very easy to make. I doubled the entire recipe (except the butter, because that adds too much fat) I used 25% less sodium chicken broth and just 1-2 tablespoons of LIGHT butter. Instead of the chipotle seasoning, I used what another person had commented (1/2tsp paprika, 1/8tsp crushed red pepper and a dash of chilli powder and it worked out great. A little heat but not too much.) There was no left overs and I will be making this again! Save the calories/salt/fat where you can! =)

Eclair Cake

This was a very easy and simple recipe to make which I loved. The only thing that everyone who ate this said, including myself, is that the topping is VERY VERY sweet. I personally love sweet, but this was over the top sweet. So I recommend eliminating the chocolate frosting the top and maybe just add an additional layer of pudding. Also I used chocolate graham crackers to give it more flavor and it was a hit! I will make this again, but just not use the chocolate frosting.

Chantal's New York Cheesecake

OMG!!! best. cheesecake. ever!!! Seriously, STOP right here, dont look at any more recipes. I searched for DAYS and looked at all different ingredients, and what to use and not to use and how to do things differently! I made this recipe, but used 1/2 cup milk instead, and CHOCOLATE graham crackers for a little chocolate taste! I also used a water bath and i had the most perfect looking cheesecake you'd swear you bought it at the cheesecake factory. I also baked my graham cracker and butter mix in the sprinform pan in the oven for 15 mins so that it wouldnt be soggy. It was PERFECT. Everyones been asking for the recipe and want me to make it for holidays :)
