Asian Lettuce Wraps

The submitter is right - the possibilities are endless! I improvised to use up what I had on hand. I didn't have any green onion, so I just used a small yellow onion. Skipped the tofu (I don't think I've ever purchased tofu before!) I also only made 1 cup of rice (to 2 cups water), which was plenty for our family of 4. We gobbled this right up. I will definitely make this again. It's quick, easy and tasty!

Simple Vanilla Syrup

Oh my! I made this vanilla syrup today, and the kids and I have been drinking iced caramel macchiatos all afternoon! My kids are 13 and 14, and it's only "cool" to drink Starbucks . . . so I usually wash the plastic cups when they leave them laying all over the house and stash them in the cupboard. Now, they can still be cool, while learning to SAVE their money!!!

Perfect Sushi Rice

I used about half of the vinegar, sugar and salt - and it was just perfect for us. By far the best sushi rice that we've made so far. I will use this recipe again when making sushi at home! Thanks for the recipe!

Slow-Roasted Beef for Sandwiches

Spot on! Absolutely perfectly roasted beef. I can't wait to try this roasting technique with other rubs (like olive oil, fresh garlic & rosemary like my hubby does his prime rib). So good, my 13 year old son was stealing it right off of the slicer, and my dog was at my heals waiting for something to drop (LOL)! I used this to make Herdez Drowned Beef Sandwiches (also from this site). Win-Win recipe combo! Thanks bd.weld!

HERDEZ® Drowned Beef Sandwich with Chipotle Sauce (Torta Ahogada)

These sandwiches hit the spot! The Herdez Chipotle cooking sauce adds such a nice smoky flavor, and one heck of a kick! My husband loved it and ate 2 sandwiches! I DID start with bd.weld's slow roasted beef recipe (also from this site), and OMG - it was so good! I put my new meat slicer to work today (it just arrived yesterday)! Can't wait to make this one again!

Vanilla Ice Cream V

Tomato, Basil, and Feta Salad

Nice side dish to my grilled pork chop tonight! 3PP per serving using only 2 Tbls of EVOO instead of 3. I used 2 medium sized tomatoes and 1 large cucumber, because that's what I had on hand. Will make again! Thanks!

Classic Beef Stew from Birds Eye®

I knew I was going to have to make a few changes to this recipe - so my 5 star review is based on the changes I made. I left my sirloin roast whole, rather than cutting it into cubes. I made a rub using fresh garlic, fresh rosemary, salt, pepper, onion powder and Herbs de Provence. I drizzled a bit of EVOO over the roast and massaged the herb mixture all around. Tossed in the bag of Birds Eye Recipe Ready veggies (nice time saver) and the beef broth. I cooked it slow and low (250 degrees for 3 hours). Removed the roast and sliced. Thickened the broth with a cornstarch slurry and served over white rice. The kids didn't even complain about dinner tonight, which in my house means SUCCESS!

Steel-Cut Oatmeal

This was super yummy! This was only my second time making steel cut oats (the first time I made them, I was not impressed - but thought I'd give this recipe a try to see if I could change my mind). It worked! I did use 2 cups of almond milk and 1-1/2 cups water. I also used slivered almonds instead of the cashews (because that's what I had on-hand). I served mine over a fresh chopped peach, garnished with a few more slivered almonds and a sprinkling of brown sugar. It was delicious AND filling!

Taco Dinner

Definitely quick and easy - so if that's what you're looking for, here you go. For my family, this needed more kick. I chose to serve it with a choice of salsas, some fresh chopped cilantro, additional raw onion and guacamole. This way, each of us could choose our own heat/flavor level. I also grilled fresh corn tortillas instead of using the boxed taco dinner kit.

Sheila's Peach Cobbler with Pecans

I hate to waste anything, and when my husband left for work this morning, he says to me "you better do something with those peaches today, or they're going to go to waste"! So I went to the handy dandy ingredients search, and plugged in peaches and brown sugar. Wahlah! Peach cobbler! I had everything on hand to make this, and just kind of eye-balled the ingredients to scale it down to 4 ramekins. The filling did spill over a bit (but I had put my ramekins on a cookie sheet - so no problem). I did end up turning the broiler on for a few minutes to crisp up the top crust a bit. Served warm with a nice dollop of whip cream! Yummo!

Refreshing Limoncello Cake

Nice cake with subtle lemon flavor. I used my homemade cream of limoncello, which may be slightly more mellow than regular limoncello. I brought this to a friend's house for dinner, and served it with fresh strawberries, blueberries and cool whip. Everyone enjoyed it! My only wish was that it was a little more moist. Maybe a bit of buttermilk next time.

Roasted New Potato Salad With Olives

Awesome potato salad recipe! Just what I was looking for to go with our brats on the grill tonight. I left out the olives, as I didn't feel they were necessary (and I didn't have any - hah)! They would have been good in it as well. I love the tip about putting the potatoes in the oven while the oven is cold. That worked really well, and if others are wondering about cooking time - I started timing once the oven was up to temperature, and I did add 5 minutes longer, just to get them nice and browned. This one is going into the recipe box! Thanks!

Grilled Tuna with Fresh Horseradish

I really enjoyed the flavors of the sauce (I put a little bit over my rice as well)! I did sub prepared horseradish for the fresh (because that's what I had on hand). Made for a nice "meatless Monday" meal.

Red Curry Flank Steak

We loved the Thai flavors in this marinade! It wasn't too spicy, but had a nice kick to it. It was a nice change from the soy sauce based marinades, and I liked the fact that there was no oil in it. Thanks Chef John!

Roasted Red Pepper Tapenade

This one's a keeper! What a great tapenade! I made this to take to a cookout at our friend's house, and everyone loved it (even the kids)! The only change I made was to use my own peppers (red, yellow & orange) that I had roasted on the grill and had in the freezer (so much better than the jarred kind), and one full can of artichokes (NOT the marinated kind). Other than that, I followed the recipe. Excellent recipe, and one that I'll be making again.

Pastel de Tres Leches (Three Milk Cake)

Excellent cake! I had never made a Tres Leches cake before, and we were hosting a Mexican themed party for some friends. We added this to our menu, and I made it the night before the party. It was SO moist and delicious. If you're wondering if you can make this a day ahead of time, the answer is "yes". I served it with fresh sliced strawberries on the side - but it really doesn't need anything else. It's perfect just as is. Can't wait to make this again - soon!
