Cowboy Casserole

This was a quick and easy lunch for me and the kids today. I used Johnsonville® Italian Ground Sausage in place of the ground beef. It was just a tad salty for me, so I added a splash of vinegar to help offset that. Otherwise, a very flavorful, filling lunch.

Kahlua Mocha Brownies

This is only based on the brownie recipe. These are a very rich, fudgey brownies, similar to the "Best Brownies" on this site. We like them, but I was expecting Kahlua flavor to be more prominent. Couldn't really tell it was in there in my opinion. Good brownie though.

Very Veggie and Beef Chili

Great way to get your kids to eat their veggies! We had an extremely busy day today, and this came together quickly. I used cannellini beans, because that's all I had in my pantry. We also don't care for green pepper, so I used orange & yellow sweet peppers instead. Overall, we liked it!

Sweet and Spicy Salmon with Grapefruit Salsa

My whole family really enjoyed this dish! Although I love grapefruit, both my husband and I can't have it due to a medication that we take. I substituted with 2 cups mango, and the juice of an orange (in trying to keep with the citrus flavors of the recipe). I liked the sweet/spicy of both the rub and the mango salsa! I decided to keep it really healthy and served it on top of a bed of arugula instead of with a starch. It was a delicious and satisfying, healthy meal - and one that I'd make again. Thanks Mazola!

Pork Carnitas with Cilantro Tomatillo Sauce

I was not able to find the chipotle chile powder, so I bought a small can of chipotle chile sauce and substituted 3 tsp. of that instead. It worked great and gave the meat a nice, smokey flavor with a bit of a kick. I also warmed the corn tortillas on my flat griddle with a bit of oil, which the directions didn't call for, but this is how I always warm my corn tortillas. The cilantro tomatillo sauce is very refreshing and balance out the flavors in the meat, in my opinion. I did squeeze a bit of lime juice over mine before eating. I served these with a side of homemade black beans and rice. Tasty, thanks Mazola!

Creamy Strawberry Crepes

This review is for the filling only, as I had already made the crepes using the "basic crepe" recipe, also on this site. I usually make savory crepes, but hubs requested a dessert crepe (odd - as he usually doesn't eat sweets), but I needed a filling. I prepare the filling exactly as directed. I really liked the lemon flavor of the filling, but the kids not so much. The cream cheese, powdered sugar, vanilla and cream proportions are just right. If you choose to forego the lemon juice, you can always thin it out a bit with a splash of milk. Nice recipe - thanks!

Cracked Sugar Cookies I

Delicious! My daughter loves soft sugar cookies, and these are perfect! They're buttery with a slightly crisp exterior, and then a soft, slightly chewy interior - if that makes sense. So easy to throw together too! Saved to my recipe box! Thanks!

Almond Crusted Chicken with Tomato Citrus Sauce

I used grape tomatoes instead of roma, as that's what I had on hand. Other than that, I followed the recipe. For us, this dish was missing something. I would have liked the sauce to have more liquid. It was more of a relish than a sauce really. I did like the almond coating on the chicken, but like others mentioned, the spices were not prominent enough for our taste. Just seemed to be lacking in flavor overall. Sorry, but this was not for us.

Perfect Sesame Chicken

My entire family loved this. I scaled this down to 4 servings; substituted rice vinegar for the distilled white vinegar and used red curry paste in place of the chile paste (because that's what I had on hand). I also just fried the marinated chicken in a bit of vegetable oil, which I recommend over olive oil. We served this over white rice with a side of steamed broccoli and some scallions for garnish. Delicious!

RITZ Cuban Minis

I have been hooked on Cuban sandwiches ever since the first time I had one in Miami Beach in November of 2012. I made these today for an afternoon snack, and I was so impressed by how much these little minis taste just like the big version! My family loved them. I think I'm going to make these for the bunco ladies next month. They're going to love them!

Apple Banana Cupcakes

These were delicious! I made half a recipe and topped them with a cinnamon cream cheese frosting. I made them exactly as written, and wouldn't change a thing. They were moist with just the right balance of apple and banana, and perfectly spiced. Will make these again!

I really enjoyed this. I subbed almond milk for the soy milk, and a handful of almonds in place of the flax seed meal. Other than those adjustments, I followed the recipe. Super yummy and filling. Will make again. Saved to my recipe box! Thanks.

Down Under Lemon Tart

I made this for a dinner party yesterday, and it was delicious! I made the lemon tart as written, but also added a top layer of cream cheese/cool whip and then topped with some fresh strawberries & blackberries. The crust is wonderful and the lemon part had just the right amount of tartness. The only reason that I added a top layer is because my tart pan was 11", and I had adjusted the recipe for 10 servings rather than 8, and it ended up not as thick as I would have liked compared to the crust. It needed something on top to bring the thickness up to the top edge of the crust - thus the reason for my addition. My review is only based on the flavor of the lemon mixture & the crust dough, and not my addition.

Thanksgiving Leftovers Casserole

I was surprised that I liked this, as I AM NOT a casserole person at all. The green beans that I made for Thanksgiving had miracle whip, bacon and onions, so I just used those in place of the frozen mixed veggies and miracle whip in the recipe. What I did like a lot about this is that it sure saves on space in the refrigerator! Rather than 3 or 4 containers of leftovers, you just have one casserole dish.

Frozen Mango Madness

This needed major doctoring in order to be drinkable for my taste. I did use lime juice, rather than lemon juice, as the submitter said it was an okay substitution in the recipe and I had fresh squeezed lime juice readily available. I found it way to "boozey" and even bitter tasting. To doctor it up, I added some frozen peaches and some sugar. Blended it in my Vitamix, and then served it with a bit of 7-up. Made it drinkable, but not something I'd make again. Sorry!
