Cranberry Snickerdoodle Cookies

Tasty cookie with a very soft texture because of the cream cheese. The cranberries worked well in here, although my kids said they'd prefer them without. Funny how quickly they disappeared though!

Heavenly Lemon Cake

This was LEMONICIOUS! If you love lemon, this cake is for you! My daughter says it tastes like a lemon bar. It is so moist from the lemon syrup, and just the right amount of tartness. It is a rich, sweet cake - but I'm sure you could cut the sugar amount back and it would still be delicious. This one is going in the recipe box!

THM Overnight Oatmeal

This was my first time making overnight oatmeal, and it won't be my last! I really liked this. I used canned peaches (fresh are not in season right now), and skipped the optional chia seeds, but did add the pecans. I am looking forward to trying this with other fruits and nuts, like the submitter suggests. Thank you!

Banana Pina Colada Smoothie

This was tasty! I used coconut milk in place of the coconut juice, as I had exactly 1 cup left over from another use. I also used canned pineapple (2 rings) with a bit of the juice, due to the coconut milk being a little thicker, to help thin it out a bit. This made for a nice lunch smoothie, and made me wish I was on vacation in a nice warm place. Bet it would be good with a shot of rum!

Cauliflower with Balsamic Vinegar

I skipped the anchovy paste (didn't have any), and other than that, followed the recipe. We enjoyed this! Might cut back slightly on the balsamic next time.

Seaweed Muffins

Not great, but not bad either! I did use the optional honey and cinnamon, which resulted in a sweet AND savory muffin. My seaweed loving husband even tried one (he never eats muffins or cakes), and liked them. He will probably be eating the majority of these with his tea in the morning. The kids thought they tasted "weird".

Strawberry Graham Cracker Bites

Hudson's Baked Tilapia with Dill Sauce

The combination of the Cajun seasoning and the cool, tangy flavors in the dill sauce work really well together in this dish. My only addition would be a squeeze of fresh lemon juice over the fish fillets before adding the spices. Everyone enjoyed! Thanks!

Lemon-Blueberry Dessert

Quick, easy and yummy! I made 5 dessert cups, and they turned out really pretty. I ended up with left over pudding - as I just kind of eye-balled it to make sure the cake was topped with enough, but not too much. No biggy! Would be great with other berries and pudding flavors as well. Thanks for sharing!

Hazelnut Cups

I wouldn't say these are easy or quick. It took me 3 tries to get the shells right. First I tried little silicone cups, then I tried the paper bon bon cups. In both cases I couldn't get them unmolded without breaking them. Then I realized that the sides of the cups need a double coating of chocolate, so I coated the insides with the 2 tsp. of chocolate, refrigerated them until set, then went back and added more chocolate to the sides with a butter knife and let them set again. That did the trick. I was able to unmold them with no problem (I did this with both the silicone cups and the paper liners, and both worked, but I preferred the shape of the silicone ones best). When incorporating the Nutella and chocolate into the whipped cream - you do need to add some of the cream to the chocolate first, to smooth it out, before adding it all to the cream (as suggested by mommascookin). This worked great. Because the shells took me so long to make, I needed a short-cut to get these done, so I ended up using canned whipped cream for the topping. I suggest adding the whipped cream, hazelnuts and chocolate covered coffee bean RIGHT before serving (I didn't use the coffee beans, as I didn't have any on hand), otherwise the whipped cream kind of weeps a bit, even when refrigerated. Next time, I will use semi-sweet or milk chocolate for the shells (just a personal preference).

Easy Chicken Enchiladas

There's nothing special about these, but they're good. I actually came across this recipe while trying to eat from my fridge, pantry and freezer. The only thing I didn't have on-hand was the cream of mushroom soup, so I made my own (2 Tbls butter; 1 large chopped mushroom; 3 Tblsp flour; 1 cup milk and 1 tsp chicken bouillon granules). For the green taco sauce, I used a 12 oz. jar of Herdez Tomatillo Verde sauce (the entire jar) and for the chicken, I actually had some sliced chicken meat that I just shredded in my food processor. I only mixed half of the sauce with the chicken, filled the tortillas, and then used the remaining half of the sauce on top. Served this with some rice and beans and pico de gallo on the side.

Spicy Oatmeal and Kale

I had a hard time eating this, as is. I did sprinkle it with some dried cranberries and sunflower seeds, as suggested by the submitter - but the cranberries did not provide enough sweetness for me. I ended up adding a bit of brown sugar, just so I could eat it. Not something that I would make again though, sorry!

Nutella® Cups

These are quick, easy and yummy! The crescent rolls that I bought only had 8 triangles per package (8 oz. package), so I only got 8 servings instead of 12. I only needed 1 banana as well. For those of you who are expecting the Nutella® to melt, it doesn't really melt down that much. Kind of melts a little where it's touching the bananas, but that's it. I tried to spread it a bit when they came out of the oven, but I could tell that it seized up a bit, so I just let them alone. They still taste great, and are really pretty sprinkled with the powdered sugar.

Flemish Frites - Belgian Fries with Andalouse Sauce

OMG - so good! A little bit of work, but totally worth it. I made the sauce in the morning, and let the flavors blend until dinner time. It is delicious! Even my husband commented on how good the sauce was, and he HATES creamy sauces. The only change I made was to fry in mixture of vegetable and corn oil, to use up what I had on hand. Fabulous recipe - thanks for sharing!
