Day Before Mashed Potatoes

Delicious!! I love that I can make these ahead of time. The downside of mashed potatoes has always been trying to keep them warm until dinner time. That problem is solved with this yummy recipe!

Black Bean and Corn Quesadillas

These were great! I made the recipe as written and is was easy, delicious, and cheap. I wouldn't go so far as to call it health food, but you could definitely eat worse. I have been trying to find some vegetarian recipes that my meat loving hubby would enjoy. These quesadillas will be a staple at my house from now on!

Roasted Vegetable Lasagna

Mall Pretzels

Wow!!! These were AMAZING!! My children and hubby have already gobbled the whole batch down (I made them 10 minutes ago). I took other reviewer's suggestions by dipping them in boiling baking soda water for 15 seconds, and also brushing them with egg right before baking. Also, I only had white wheat bread flour on hand, so I used that, and they turned out great. I did only use three cups of flour though, instead of four. We topped our pretzels w/ melted butter w/ kosher salt on half the batch and cinnamon sugar on the other half. Both were a hit!

Pumpkin-Apple Muffins with Streusel Topping

These were delish! Very moist. My batch made 18 good size muffins. My children loved them too. The only substitutions I made were fresh pumpkin instead of canned and I used cinnamon, nutmeg, cloves, and ginger instead of pumpkin pie spice. I will be making these a lot!

Pralines

This recipe was excellent and very similar to the Pralines at River Street Sweets in Savannah, GA. I did not toast my pecans. The best outcome seemed to depend on when I poured them out on the cookie sheet. The ones that I spooned out immediately were too flat and glossy. The ones that I spooned out after the mixture had cooled were too crumbly. The ones that I spooned out after the mixture had cooled for 2-3 minutes were the perfect consistency. I would recommend waiting just a couple of minutes, then quickly spooning them onto the cookie sheet. I will definitely be making these many times over the holiday season!

Meatball Sandwich

Candy Ice Cream

This was a wonderful recipe. I made it w/ crushed oreos instead of candy pieces. I also halved the sugar, as some reviews suggested and it was still a little too sweet. Next time I will leave out the sugar completely. The texture of the ice cream was what made it so amazing though!! Very light and fluffy and delicious!!

Georgia Peach Homemade Ice Cream

This ice cream was INCREDIBLE. So creamy and just the right amount of sweetness and peach...I took others suggestions and added 1 c. of sugar...and I don't think it would have been sweet enough without it. Yum!!

Blueberry Zucchini Bread

Very good recipe. Like others have said, this is a great way to get the family to eat fruit and veggies w/o even knowing it. I modified it slightly to make it more healthy. I substituted half of the oil for applesauce, reduced the sugar to 1 3/4 cups, and substituted 1 c. whole wheat flour for the white. They were excellent!!!

Best Ever Sausage with Peppers, Onions, and Beer!

Wonderful recipe!!! This was a great "manly" meal for my hubby and father in law!!! B/c I used hot sausage, I reduced the hot sauce by half and it was still spicy. Also, from another review, I cut the sausage into pieces before cooking to cut down on the cooking time. I served it over white rice. it was a big hit!!! Thanks!!!

Baked Salmon Fillets Dijon

Neither my husband or I are big fans of salmon but I had some so I thought I would give this recipe a try. It was excellent!!! I will use this again and again. I only had plain breadcrumbs on hand, so I added a little Old Bay Seasoning. It was great. Thanks so much!!
