Spinach Fettuccine with Sausage, Peppers and Olives

I basically followed the recipe, except used mild Italian sausage (instead of hot), and a can of diced tomatoes (instead of fresh tomatoes) and we really enjoyed it. My husband likes the olives, but finds them a little overpowering, so next time, I will cut them into quarters. Very tasty and easy to make!

Pesto Pasta with Chicken

Super easy and good recipe. I threw in a couple of handfuls of fresh spinach (for 4 servings)in the last few minutes of cooking the chicken. Once the spinach was wilted, it really added a beautiful color to the dish - wish I had taken a picture!

Coconut Bread Pudding

Chicken Noodle Soup

The butter really adds body and flavor to this wonderful soup. I added a teaspoon of garlic to the butter and onion and doubled the amount of onion. My husband never cared for my homemade chicken soup before, but he LOVED this!

Oven Roasted Teriyaki Chicken

My husband loved this! Said it was probably the most moist chicken he has ever had. Used brown sugar instead of Splenda and pineapple juice instead of cider vinegar. Also used 2 breasts in place of some of the thighs.

Apple Bacon Tomato Soup

My husband doesn't eat beans, so omitted them, and this was still a great soup! I sauteed the onion and garlic in sherry and used an immersion blender on the tomatoes before adding them. Smelled great too!

Bread Pudding II

So very easy to make and it was wonderful! Substituted low sugar, dried cranberries for the raisins and made a bourbon sauce to pour over it. The leftovers (there's only 2 of us!)heated up well in the microwave.
