Grilled Cabbage II

I had some leftover cabbage and thought I would give this a try. I was very reluctant though. To our surprise we loved it. I bought a new head of cabbage just to make this again!

Potato Salmon Patties

This was wonderful. I used left over salmon from the "Grilled Salmon" from this site and "lemon sauce" from this site as well. I added "dashes" of garic salt, onion powder, lemon juice, hot pepper sauce and some cheddar cheese. I too baked them in a muffin pan at 350 for 40 min.

Grilled Broccoli

These were GREAT! I put everything in a bag and added the broccoli and let marinate an hour or so. Placed broccoli mixture in a tin foil packed and grilled. Yummy!

Grilled Salmon

These were wonderful! I too used evoo and blended the flavors in a blender and let marinate a few hours. So yummy and refreshing! Served with lemon pepper rice.

Sausage Stuffed Jalapenos

We love this recipe. We are always asked to bring it to every event we attend. I also have it at every one of my parties. So yummy! I make the filling ahead of time and stuff the jalapenos. Then bake them right before I need them. Oh, I also use light cream cheese and reduced fat flavored sausage.

Garlic-Lemon Double Stuffed Chicken

Wow! This was amazing! My husband gave it 10 stars! I marinated the chicken in buttermilk and lemon juice. I did have to cook mine a litter longer, maybe my oven. I added the paprika and garlic salt (and pepper) to the bread crumb mixture. Then added more paprika on top of chicken in the cooking dish. This gave it a great color. Oh, I broiled the chicken in the end for a crisp top. Yummy.

Honey Mustard Dressing II

We loved this recipe! As is, it is great as a dipping sauce. For asalad dressing I added a little beer to thin. Amazingly, it turned out great.

Cottage Cheese Chicken Enchiladas

We loved this recipe. We too added two cans of enchilada sauce and placed some of the sauce on the bottome of the pan. The toppings could be endless. This is a keeper! PS I used low fat cream cheese and low fat cottage cheese. Thanks!

Spinach Rice

Until I learn how to edit my own recipes I will write a review. I usually use 1 cup of uncooked rice. If I don't have fresh jalapeno, I add jar jalapeno to my liking. More milk may be added. I am a "taste as you go" cook, so it's hard to get the measurements right. Hope you all enjoy!

Coconut Shrimp II

This was wonderful! The best coconut shrimp I've made. I did make a few changes though. I added about 1/2 cup beer and some milk until the consistency was right. No curry powder. Added 1/4 cup Japanese bread crumbs to coconut mixture. Served with a orange marmalade sauce.
