Scalloped Potatoes and Onions

Reviewed: Jan. 7, 2010
This was fabulous and flavorful! I served this on Christmas day to rave reviews. It is amazing how decadent this is without cheese or cream...so rich and satisfying. I followed the directions except I did not measure the onion...I just used one baseball sized onion chopped. Great recipe...a keeper!

Blueberry Buckle

This was really delightful. The crunchy sweet topping was what really put it over the top. I followed the recipe and wouldn't change a thing. Wonderful for a brunch.

Very delicious and easy to work with. This will be my go-to recipe...no need to look any further. Thanks for sharing.

Green Bean and Mushroom Medley

Reviewed: Mar. 4, 2009
This was surprisingly delicious! I have a new favorite veggie side dish! As written, this is too salty. I will use about 1/2 next time. You can always add more...much harder to take away. Overall, this is a keeper and I'm sure I will serve it often.

Ham and Cheese Quiche

Reviewed: Feb. 9, 2009
I really thought this was a great recipe. I made it according to the directions except I did not have the Swiss and I used leftover spiral sliced ham that I diced. Really delicious served with leafy green salad with red wine vinaigrette and crisp white wine. I'll be making this often with different meats, cheeses and veggies. Great!

Chocolate Frosting I

Reviewed: Jan. 25, 2009
I thought this was good but not great. I think adding more cocoa would make it better. The texture was nice and it didn't stick to the plastic wrap!

Grandmother's Buttermilk Cornbread

Reviewed: Jan. 25, 2009
Just perfect! Using the buttermilk makes all the difference. I've used regular milk when I didn't have buttermilk and it is so much tastier with the buttermilk. I always add a splash of vanilla because that's how my grandmother always made hers. A keeper, I need look no further for a cornbread recipe.

Molten Chocolate Cakes

Reviewed: Jan. 3, 2009
These were really spectacular. My guests were impressed. I used semi-sweet chocolate chips (what I had on hand). I did have to bake about 3 minutes longer than instructed which is unusual for my gas oven but they turned out perfect with that gorgeous oozing center. I served with powdered sugar and a scoop of strawberry ice cream. The cakes aren't overly sweet but they are rich. I will make these again and again.

The Best Rolled Sugar Cookies

Reviewed: Dec. 9, 2008
Made these at a cookie party with my daughter, nieces and nephew. The cookies are tasty and the texture is nice. The only problem we had was that the dough was very sticky even after having been refrigerated for several hours. We ended up having to add a good deal more flour to get it to be manageable enough to roll out. Some of the thicker cookies had a floury taste because of this but if you are careful to roll them fairly thin the flavor does not suffer.

Juicy Roasted Chicken

Reviewed: Sep. 30, 2008
This was absolutely the juiciest chicken I've ever had. I followed the recipe except I didn't have any celery so I used celery seed. Also, I accidentally roasted the chicken upside down. Don't ask me how! My husband said it is the best roasted chicken he's ever eaten. Delicious.

Golden Sweet Cornbread

Reviewed: Aug. 11, 2008
Sweet and moist. Perfect with spicy chili. I've made it twice with great results. The first time I followed the recipe as written and the second time I substituted the oil for unsweetened applesauce (as my husband's cholesterol is a little high). We really couldn't note any remarkable difference. I'll be making this again and again.

Pecan Chewies

Reviewed: Jul. 29, 2008
In one word: YUM! These are simply scrumptious. I followed the recipe as written. Next time I think I will use a baking sheet to achieve slightly thinner bars. Tastes like the perfect combination of pecan pie and a blondie (vanilla brownie).

Mama's Balsamic Vinaigrette

Reviewed: Jul. 27, 2008
This didn't knock our socks off. I think the strong vinegar flavor overpowered the other ingredients. I'll play with this one though and tweak it to better suit my family's preferences.

Yummy Pork Chops

Reviewed: Jul. 22, 2008
We devoured these pork chops and I don't even like pork chops! This was well beyond my expectations. I didn't have an "Italian" dressing, per se, so I used a bottled balsamic vinaigrette. It was super tasty and super easy. Great recipe! I served with brown rice and broccoli and we cleaned our plates. We'll be making this for years to come.

Oatmeal Biscuits

Reviewed: Jul. 15, 2008
Good recipe. A nice change from ordinary biscuits. These biscuits rose only slightly and were pretty dense not light and airy like a typical biscuit. The sweet flavor was nice and was tasty served with a traditional omelet and fresh fruit. Yummy with apple butter from the farmer's market!

Honey Roasted Red Potatoes

Reviewed: Jun. 29, 2008
These were good but not great. They weren't very tasty to us. My mother-in-law asked what the seasoning was and said "Oh, it's different." I won't make these again.

Homesteader Cornbread

Reviewed: May 27, 2008
I baked this cornbread before reading the most recent reviews which expressed concern about the recipe, however, it turned out just fine for us. I served it with flank steak seasoned with a spicy mexican dry rub and black beans with jalapenos and the sweetness of the cornbread was a very nice balance with the spicy steak and beans. I will say it tasted less "corny" than other cornbreads I have made. Next time I might swap the flour measurement with the cornmeal measurement. The texture was nice...it was a high riser.

Army SOS Creamed Ground Beef

Reviewed: May 3, 2008
This was just so-so. A very filling meal but rather bland on the flavoring. I followed the recipe as written but if I make it again I'll try to get some more flavor in there. Maybe saute a small diced onion?
