Classic Caramel Corn

With Allrecipes, there is nothing I can't make. I would have never thought I would have caramel popcorn in my very own living room watching a Netflix movie. Easy and Delicious. Compared to other recipes it calls for much less butter which is always good. I didn't have to bake it as long as it directs. However the longer it sits once out of the oven the more crunchy it becomes. Hot or cooled down it's great.

Sausage and Egg Casserole

I was asked to make a brunch featuring this casserole because my friends love this dish. However, to help with calories, I use pre-cooked turkey sausage. I also enjoy adding sautéed crimini mushrooms. The absolute best part of this casserole is making it the night before and baking it in the morning so the entire house smells delicious.

Mmm-Mmm Better Brownies

So easy and so so good. Used pecans vs. walnuts and sprinkled with powdered sugar. This will be my "go to" when I need something sweet in the house for company.

Campbell's® Easy Chicken and Cheese Enchiladas

These were the best enchiladas ever. It's odd to see a few negative reviews. They are hot, juicy and tender. Instead of tomatoes and onions on top, I added a few slices of avocado. I will make them over and over for certain!

Baked Salmon Fillets Dijon

The mustard gives the salmon a slight sweetness. I always have dijon, butter and breadcrumbs so these are the recipes that make cooking easy. My salmon wasn't 100% thawed out so I doubled the cooking time and it turned out great!

Crisp Oatmeal Cookies

This is a great recipe. I added oats and toasted shredded coconut. After rolling into balls, I used the bottom of a glass to flatten. Last, I pressed a sugar coated fork on top of each flattened cookie. They are crispy on the outside and soft on the inside.

English Royalty Chocolate Chip Scones

Great Scones! Like most of the reviews mention, I did have to double the OJ. I also added orange zest and 1 table spoon of cointreau (keeping with orange theme).
