Soft Oatmeal Cookies

My entire family loved these cookies. They said that they were the best cookies I've made yet and I must agree with them. Very easy to make. I left them in the oven for about 9-10 minutes and they came out extremely soft, moist and didn't fall apart. I used "Bob's Red Mill" gluten free old fashioned rolled oats. This recipe made nearly 3 dozen cookies. I let them cool on the cookie sheet as directed and then transferred them directly to my pub table on some parchment paper. All of the cookies were gone within 2 days.
