Marinated Veggies

I loved this combo of veggies, and I'll definitely grill them together again. But the marinade wasn't great. I guess it was too much lemon, because the veggies -- especially the squash -- tasted sour. I'll try again next time with less lemon.

Spicy Garlic Lime Chicken

I had large, thick pieces of chicken, so I used extra oil (about 3-4 tbsp) to avoid the pan drying out. It worked great. After cooking them in the skillet, I stuck them in a 350-degree oven for about 10 minutes while I was waiting for my grilled veggies to finish, and they came out perfectly done and so moist! I'll definitely be using this recipe again.

Spaghetti Chicken Casserole

This tasted like a good tetrazzini to us. I used two big chicken breasts that I coated with garlic powder, salt and pepper and drizzled with olive oil and then baked in the oven. I used a whole red bell pepper instead of green, half a medium onion and about 2/3 cup of chopped fresh mushrooms. With all that extra veg, I needed to double the mushroom soup and wine. I used parmesan cheese instead of cheddar. It turned out great! I came out with enough for our family of four plus plenty of leftovers for lunch tomorrow.

Ground Beef with Homemade Taco Seasoning Mix

I was skeptical, but the seasoning mix in this recipe really does taste a lot like a taco seasoning packet. I didn't have cornstarch, so instead of the water I used about half a can of tomato sauce. I added a little more salt than called for to counteract the sweetness of the tomato sauce. I let it simmer until it was thickened. I think I'm going to make my taco meat like this from now on. Oh, and I used turkey, and you couldn't tell it wasn't beef!

Beef and Guinness® Stew

This smelled amazing as it was cooking. I dissolved about a tablespoon of flour into some of the cooking liquid and added it back into the pot to help thicken it up. The taste was a little more bitter than I expected, but not in an overpowering way. It was fabulous with the garlic mashed potatoes I made. Not sure how it will be on its own, but I'll find out when I eat the leftovers tomorrow.

Pecan-Crusted Pork with Pumpkin Butter

Very good, but I think I'll just bake it next time to reduce some of the oiliness. I fried it in the skillet as directed, but the breading burned easily even at a lower heat. So I finished it in the oven. The pumpkin puree was perfect on it, and I'm eating it on my bagel this morning, too. :)

Garlic Mashed Potatoes Secret Recipe

I don't think I'll ever make mashed potatoes a different way again. YUM. I did roast the garlic (4 big cloves for 4 pounds of potatoes -- I'll double or triple that next time). And I used pepper instead of oregano just because I don't care for oregano. These potatoes were superb!

Creamy Herbed Pork Chops

My entire family loved this. I made exactly as written except I left out the bouillon (it was plenty salty without it) and I sauteed some fresh mushrooms to put in the gravy. I thought the gravy was a little too white/cream for me, so next time I may try some beef broth and a splash of heavy cream in place of the milk. Overall, though, it was a hit.

Spinach Tomato Tortellini

I've made this exactly as directed, and I've made it with alterations (fresh tomatoes, fresh garlic, etc.). It's fabulous either way, so feel free to put your own twist on it. I will say that I use probably 3-4 times the amount of spinach it calls for. My whole family enjoys this recipe, and I feel like we're having a special treat without much work.

Italian Grilled Cheese Sandwiches

These were a nice change of pace from our regular grilled cheese. However, be sure to either cook each side for only 1 minute or put your pan on the bottom rack instead of right next to the broiler element. Next time, I'll put a basil leaf on top of the cheese. I served it with the gorgonzola tomato soup from this site, and they were great together.

Really delicious. I couldn't even tell I was eating canned soup! I used 1/2 cup milk and 1/2 cup heavy cream, and that really made it creamy and good.

Mom's Easy Chicken Divan

We don't like mayonnaise, so I used nonfat plain Greek yogurt instead. I thought it helped to cut the taste of the canned soup while adding a bit of tang. I also added fresh sautéed mushrooms and used fresh steamed broccoli. Pretty good, but you can still taste the canned soup.
