Summer Squash Pizza Crust

Love this recipe! Fantastic use of a very abundant vegetable that nobody in the family is too fond of. Have made this several times and decided to up the flour to 1 cup and lower total amount of cheese to 1 cup. This makes the consistency a bit more dough-like rather than being so soupy. Also, the flipping bit is not necessary and I skip it. Takes too long and too much effort!

Homemade Fresh Pumpkin Pie

This is a winner! Loved it so much. Can't wait to have an excuse to make another. It was the PERFECT amount for one deep dish pie. To get the 2 cups of mashed pumpkin, I had to use 8 cups of pumpkin I had cubed and frozen, then steamed and ran through food processor.

Pumpkin Chocolate Chip Cookies III

I substituted applesauce for most of the oil and used fresh pumpkin. Wonderful! Great almost cake-y consistency. I'm saving this one.

Cheesy Vegetable Chowder

Wonderful recipe! Super tasty, hearty, and easy! I am a vegetarian always looking for something to make that also satisfies the carnivores in my life. This did it! Many went back for seconds (including me) and others who claim they don't like any vegetables easily ate it up! My boyfriend's father even asked for the recipe.

Crustless Spinach Quiche

I made this for some friends and they asked for the recipe (only difference was mozzarella cheese instead of muenster because that's what I had on hand and I added a big tomato)! While I was making it, I wished I had doubled it in the first place for myself. A couple days later I made it again for me and my fiance and his family. Only this time, trying to please various people, I left out the spinach, used the mozzarella cheese, chopped up a big tomato, threw in a heap of dried basil, and a little garlic powder. FANTASTIC! Only change I may make is to cut back on the cheese. I love cheesy, but I think a little less wouldn't take away from it at all and 3 cups is a lot.
