Pumpkin Cake I

This recipe is delicious! I made it for my friends and husband, and they raved about it. We ate it warm, with a little powdered sugar on top, and a large dollop of whipped cream. As my friend put it, "It tastes exactly like a pumpkin pie, but it's a cake!" The recipe said to sprinkle powdered sugar on top, but I was wondering if I should mix up some glaze instead, and I'm glad I didn't. The cake was sweet enough, and I think a glaze would have been overkill. This cake was awesome, and it now has a permanent spot in my recipe box. I will be making this recipe again, because it's perfect for the holidays!

Cream Cheese Frosting II

Great icing recipe! I used this with the Carrot Cake XI recipe found on this site, to make a special cake for my family. We all loved it. My husband couldn't raved about how good the icing was, and proceeded to lick the bowl and spoon completely clean! I might add a little bit more sugar next time, though, because it had a strong cream cheese taste. I can see how other people who reviewed this recipe thought it was too runny: I think they might have let the cream cheese and butter get too soft, and might have over-beat it when they were creaming them together. It's a fine line between not creamy enough and too creamy, so be careful. Mine came out a little soft, but I just put it in the fridge for a bit. Otherwise, it was great and I'll most definately use it again!

Carrot Cake XI

My family loved this carrot cake! My husband is a huge fan, and said that it was a great recipe. I liked the fact that it didn't use jars of baby food carrots, but instead used fresh, grated carrots. It was very moist and rich. The only thing I changed was that I added 1 teaspoon of allspice, to give it more of a spice cake flavor. I will definately use the recipe again. It's earned a permanent spot in my recipe box!

Simply Parmesan Chicken

I made this recipe for the first time when company was over, so I was a little nervous about how it might turn out. But everyone loved it! It was really yummy, seasoned just enough, but not so overwhelming that you couldn't taste the chicken. My husband, one of the pickiest eaters I know, still raves about it and has asked me to make it again soon. He likes the way it tastes; I like how easy it was to make!
