Mini Frittatas

Really good like little muffin Kiesh. We went with a 10 oz package of spinach and it was just fine. I would agree that I would garnish mine with additional salsa but I like salsa a lot. We made an even dozen in our little muffin tin and I could only eat two. Not too bad health-wise. Although a little high in fat they are really packed with protein. I would definitely recommend giving it a shot. Kids thought they were pretty good too and gobbled them all up.

Go-To Crawfish Etouffee

Pretty good, relatively quick and easy to make. I had to use cream of celery instead of cream of mushroom since I was out of the latter. Still turned out pretty well. This is a pretty handy faster recipe than most.

Blue Cornmeal Pancakes

Pretty darn good twist on a pancake recipe. Kids loved having blue-ish pancakes. The recommendation to let them cook slightly long was dead on as this batter seemed moister and heavier than normal pancake recipes. I would also advise mixing just enough to get everything well blended. I stirred mine quite a bit and the pancakes ended up less fluffy than they could have been. All in all though, the me and the kids liked these more than our normal pancakes and they are already asking to have these again next weekend.

Mashed Jalapeno-Cilantro Sweet Potatoes

Really zippy flavor! Definitely a repeat. Next time I will double it. Also, after roasting the jalepeno I took the seeds out to make it mild enough for the kids to eat. I still got the jalepeno flavor without too much bite. Also could halve the butter to cut down on fat, I didn't notice the difference.

Pressure Cooker Italian Chicken Soup

The wife and I really liked this one. Very colorful, very hearty. Definitely use fresh parsley and fresh spinach. The parsley adds a nice touch without being overpowering. Also used reduced sodium stock which really cut down the high sodium in this recipe making it a fairly nutritious dish.

Bacon Wrapped Pesto Chicken

Really easy to make, very tasty recipe. We made ours a little less healthy by smothering the chicken in pesto then wrapping the bacon.

Italian-Style Swiss Chard

Simple recipe, very tasty. I have made this twice now and my wife and I love it. It has a very savory flavor. Chard really cooks down much smaller.

Roasted Red Pepper and Tomato Soup

Meh soup. Roasted red pepper and spicing was good but the tomato overwhelmed everything and was too watery. Probably if I had better tomatos and cooked it longer during the second step to really, really cook off all the tomato juices it could have been better. I cut back on the chicken stock to 4 cups and I still would if I had to do it again. Definitely a labor and time intensive recipe.

Restaurant-Style Zuppa Toscana

Excellent soup. Wife and kids loved it. Kids really liked it which was surprising since they are kinda picky. I would agree with some of the other reviews, if I did it again I would cook the bacon seperate and drain the grease as it could be a little rich for some people.

Sweet Potato, Carrot, Apple, and Red Lentil Soup

Wow! What a savory, hearty winter soup. Wife said it was her favorite soup to date. I had to use chicken broth in lieu of vegetable broth. I added a potato and left the skins on to keep more nutrition locked in, nobody noticed since it all ended up pureed. Also used vanilla flavored greek yogurt. I think plain would have been better. Really healthy except for the sodium. I think I would hunt down some low sodium vegetable broth next time. Really left me full too with all those complex carbs.
