Mayonnaise Biscuits

FINALLY! I have found a biscuit recipe that turns out. I have never been able to make biscuits until now, they came out perfect. My whole family loved them. If I can make these, ANYONE can!!

Old Fashioned Scalloped Tomatoes

I made this recipe with some variations. I don't like saltines so I used crushed herb seasoned croutons and added 2 cloves of minced garlic to the tomatoes. I also stirred about 1/4 c of mozzarella cheese into the mixture and salt and fresh ground pepper then topped with the parmesan. After reading other reviews I added a little of the tomato juice to moisten but wish I hadn't, it was really mushy but the flavor was great. Tried the leftovers on toast per another reviewer...that was excellent. Will definatley make this again but don't think I would try the recipe as is...it sounds too bland.

Mini Meatloaves

EXCELLENT! I made this in my cupcake pan, it made 11 meatloaf cupcakes and I baked them for about 35 min. The ketchup glaze is awesome! Even my 7 year old liked it and he's not big on sweet tasting dishes. Will make many times in the future.

Easiest Pot Roast Ever

The flavor was good but my roast came out very dry. I think the roast should be browned first, putting it in the crock pot raw made the veggies on the bottom look gray and almost unappetizing. Then having the beef cubes on top made dark spots on the roast. It tasted better than it looked. I think I will keep looking for a crock pot roast recipe.

Chicken Delicious

WONDERFUL! I've never cooked with wine before, always substituted chicken broth, but the wine made all the difference. I baked this at 350 for about an hour and 15 min and served over egg noodles. The chicked was SO tender and the sauce perfect. I used 5 chicken breasts but kept the sauce recipe as is. A keeper!!

Creamy Chicken and Wild Rice Soup

I have made this recipe 3 times now and we love it! I use a box of traditional Uncle Ben's wild rice that simmers for 25 min and to the rice and broth mixture I add onion, celery and carrots to make it a more hearty soup. Then I use leftover chicken or I boil chicken separately and add it to the soup when I add the roux. I use regular 1 or 2% milk...the cream is too rich for us. Fast, easy and fool-proof. Will make over and over again. Thanks for a great recipe!

Quick Black Beans and Rice

Very quick recipe, I made this with Chicken Enchiladas also from this site and was able to make this dish while the enchiladas baked. My husband didn't really care too much for it but our dinner guest and myself liked it. Next time I will add an extra can of beans, drained and rinsed so there's not too much liquid. I would like more beans in the dish.
