Baked Stuffed Tomatoes

Reviewed: Dec. 12, 2005
This was 50-50 for us. My mom and myself liked them and my dad and husband did not care for them. You have to like fresh tomatoes to like this recipe. Will make again for my mom and myself :-)

Oat Applesauce Muffins

Reviewed: Dec. 12, 2005
I was looking for a low-cal muffin recipe and this one is very good. I added cinnamon. They freeze well, too. Will make again.

Chicken Jambalaya I

Reviewed: Dec. 12, 2005
My daughter and I loved this but my husband didn't. I used turkey instead of chicken. Will continue to look for a jambalaya recipe to please hubby.

Cheesy Italian Tortellini

Reviewed: Aug. 8, 2005
This was OK, just tasted like canned sauce to me, I think the sauce needs to be jazzed up a bit. I don't think I'll make this again.

Quick Black Beans and Rice

Reviewed: Aug. 8, 2005
Very quick recipe, I made this with Chicken Enchiladas also from this site and was able to make this dish while the enchiladas baked. My husband didn't really care too much for it but our dinner guest and myself liked it. Next time I will add an extra can of beans, drained and rinsed so there's not too much liquid. I would like more beans in the dish.

Grilled Salmon I

Reviewed: Aug. 3, 2005
This was pretty good, I think I marinated my salmon too long because the flavor was VERY strong, will reduce marinating time next time I make it.

Creamy Chicken and Wild Rice Soup

Reviewed: May 11, 2005
I have made this recipe 3 times now and we love it! I use a box of traditional Uncle Ben's wild rice that simmers for 25 min and to the rice and broth mixture I add onion, celery and carrots to make it a more hearty soup. Then I use leftover chicken or I boil chicken separately and add it to the soup when I add the roux. I use regular 1 or 2% milk...the cream is too rich for us. Fast, easy and fool-proof. Will make over and over again. Thanks for a great recipe!

Throw Together Mexican Casserole

Reviewed: May 4, 2005
We loved this! My 21 month old ate like it was going out of style. And it's even better as leftovers. Will make many times in the future.

Chicken Delicious

Reviewed: May 4, 2005
WONDERFUL! I've never cooked with wine before, always substituted chicken broth, but the wine made all the difference. I baked this at 350 for about an hour and 15 min and served over egg noodles. The chicked was SO tender and the sauce perfect. I used 5 chicken breasts but kept the sauce recipe as is. A keeper!!

Pizza Pinwheels

Reviewed: Apr. 18, 2005
These were OK, a little too doughy for our liking, could have used more filling but then they could be harder to roll up. Don't think I'll be making them again.

Easiest Pot Roast Ever

Reviewed: Mar. 4, 2005
The flavor was good but my roast came out very dry. I think the roast should be browned first, putting it in the crock pot raw made the veggies on the bottom look gray and almost unappetizing. Then having the beef cubes on top made dark spots on the roast. It tasted better than it looked. I think I will keep looking for a crock pot roast recipe.

Mini Meatloaves

Reviewed: Mar. 4, 2005
EXCELLENT! I made this in my cupcake pan, it made 11 meatloaf cupcakes and I baked them for about 35 min. The ketchup glaze is awesome! Even my 7 year old liked it and he's not big on sweet tasting dishes. Will make many times in the future.

Old Fashioned Scalloped Tomatoes

Reviewed: Mar. 4, 2005
I made this recipe with some variations. I don't like saltines so I used crushed herb seasoned croutons and added 2 cloves of minced garlic to the tomatoes. I also stirred about 1/4 c of mozzarella cheese into the mixture and salt and fresh ground pepper then topped with the parmesan. After reading other reviews I added a little of the tomato juice to moisten but wish I hadn't, it was really mushy but the flavor was great. Tried the leftovers on toast per another reviewer...that was excellent. Will definatley make this again but don't think I would try the recipe as is...it sounds too bland.
