Tarragon Chicken Casserole

This was OK, I did like the tarragon for a change of pace. I had some trouble with the proportion of the sauce. I was going to cut the recipe in half but when adding a cup of half and half to a can of soup it was VERY thin. So I added another can of soup and that was perfect with 3 c of chicken and 8oz of pasta. We all liked this recipe but it wasn't anything to write home about.

Almond Chicken Casserole II

Very good, too much rice in my opinion, I didn't add all of the cooked rice and I could have cut it back a little more. Loved the crunchy almonds, next time will leave out the cornflake crumbs and maybe just sprinkle with a little cheddar. Overall a good recipe.

Strawberry Cake Cookies

These had excellent flavor but were very gooey and sticky. Not sure if I just needed to bake them longer or if it was because I used fat free cool whip (maybe a little of both).

Coconut Bread

This was a crumbly bread but everyone at work loved it, it was almost gone before I even told everyone that I brought it. I sprinkled extra coconut on top before baking and it got nice and toasty golden brown.

Basic Bean Soup

I added a pound of ham and also a pound of bacon (fried before adding to the soup). I also used navy beans and the soup cooked really fast, it was done about an hour and a half sooner than I expected. This was sooooo good on a cold winter day. I can't wait to make it again!

White Chocolate Grapes

These were so good, I could have eaten them all before the guests arrived. I melted the chips and then put all of the grapes in the bowl and tossed to coat then spread them onto wax paper and sprinkled finely chopped peanuts over the top. These were a hit!

Hearty Meatball Soup II

This was great! It also made a lot! I had an extra half pound of hamburger and thought I'd put it in and there were almost too many meatballs for the soup. I did not add pasta but did stir in some quick cooking barley. Will make again and will try to freeze.

Excellent and a nice change from traditional sloppy joe sandwiches. Made according to recipe except for adding about a teaspoon of ketchup and about a tablespoon of dried minced onion. Will make again soon!

Spiced Applesauce Bread

We loved this recipe. I doubled the recipe and used half as much oil as was called for, substituted half whole wheat flour and added raisins and walnuts. I took a bunch to work and everyone loved them! Will make again.

Beer Cheese Soup II

We thought this soup had no flavor at all. It was not cheesy, the only flavor it had was from the bacon bits on top. It tasted more like Cream of Beer soup than anything else. I would not make this again without some significant adjustments, just not sure what.

Chicken Florentine Casserole

Whole family loved it. I used frozen spinach because canned just seems yucky to me. I added fettuccini noodles on top of the spinach and mushrooms. Made it in a 9x13 pan and doubled the sauce. I accidentally added too much milk to the sauce but it was OK because the noodles soaked it up. A month or so after I made it my husband mentioned how much he had liked it so I know it's a keeper!

This was pretty good. I added nutmeg and made a crumb topping per other reviewers. This is probably something I'll make when I have an abundance of apples from our trees in the fall.

Cheddar Chicken Spaghetti

This was good for a quick weeknight meal, espescially when you get home 45 minutes later than normal. Easy to whip up and everyone liked it. I added minced onion and garlic poweder and parsley for color.

Greek Pasta with Tomatoes and White Beans

We loved this dish. I will make this over and over again. Super fast, easy and cheap! I made some changes. Sautéed a little onion and 3 cloves of garlic in olive oil, then added a little sherry and let it cook down. Only had plain canned tomatoes so I added a good Tbsp of Mediterranean seasoning, 1 Tbsp of sugar, black pepper and cayenne pepper to them. Added sliced black olives and had to use frozen spinach which I drained well and only used ½ of the box. That worked fine. All I had was fettuccini so I tossed it with the tomato mixture and had to add a little chicken broth because it was a little dry. Excellent!
