Never Fail Biscuits

Perfect every time. I didn't have creme of tartar though so I just compensated with extra baking powder. I also melted some butter and and wiped it over the tops and bottoms of the biscuits with a brush when I pulled them out of the oven. They are to die for.

This recipe was perfect. The only thing I did differently was instead of using a round angle food cake, I used thinly sliced butter cake which was wonderful. I think next time I'll add blueberries as well.

Penne with Spicy Vodka Tomato Cream Sauce

Absolutely delicious! I loved the kick that the crushed red pepper added! I followed this recipe to a tee and it was perfect! No changes needed. My family couldn't get enough of it and we all agreed that it was restaurant worthy. This recipe will most definitely become a regular and a new family favorite.

Cream Cheese Frosting II

This tasted great. I was making this to put on top of the cinnamon rolls I mad for breakfast this morning and it tasted excellent. I made a few modifications though. I didn't really need that much frosting so I cut the cream cheese in half, using only one 8 ounce package. I maintained the 1/2 cup of butter, used 1 1/2 cup of powdered sugar, and had to forgo the vanilla because I forgot that I ran out. To make it a little thinner, I added a few tablespoons of milk to it. Came out great, but next time I may leave it at 1 cup or 1 1/4 cups of powdered sugar instead. I liked the distinct taste of the cream cheese without the overwhelming sweetness that many cream cheese frostings have.

Ninety Minute Cinnamon Rolls

This recipe is perfect just the way it is! My family couldn't get enough of them and they made for an excellent Sunday breakfast. I used chopped walnuts instead of raisins and I put homemade cream cheese frosting on top, garnishing with the left over walnuts. I agree with many of the other reviews that you need to put an extra pan under the muffin tin. My cinnamon rolls puffed up over of the top and the cinnamon oozed out and over the sides of the tin. Charred cinnamon and brown sugar are stuck to the bottom of my oven now. It was definitely worth it though!

Best Big, Fat, Chewy Chocolate Chip Cookie

"Best Big, Fat, Chewy Chocolate Chip Cookie" is probably the most accurate description of a recipe I've seen. They really are the best, big, fat, chewy, chocolate chip cookies I've ever had. I followed the recipe exactly and they were just absolutely perfect! I still had half of a bag of chocolate chips left from when I made Christmas cookies but I don't particularly care for Tollhouse's recipe. I think they're too thin. So I decided to search for a different recipe promising thicker, chewy, delicious cookies and this recipe hit the nail on the head! This will be my new chocolate chip cookie recipe. Don't be alarmed by the drier dough.I was a little weary at first because the chocolate chips weren't all sticking well in the dough but the cookies will come out great! Also, the recipe could stand to have fewer chocolate chips. Maybe 1 1/2 cups instead of 2.

Loaded Mashed Potato Cakes

I made a lot of modifications to this recipe. For starters, I used closer to 3 cups of mashed potatoes and only 1/3 cup of flour. I honestly omitted or changed the amounts of most of the ingredients and used my own. I didn't have any yellow onion left, so I used 1/2 cup of red onion but I still maintained the 1 stalk of celery and the egg. I then added about a tbs of fresh chive and upped it to 4 pieces of bacon. I put in about 1/4 cup of sour cream, 1 tsp of freshly minced garlic, garlic powder, sea salt, ground pepper, onion powder, and original Mrs. Dash. I sauteed the onion, celery and garlic together in the bacon grease (I drained some of it out) and added 2 tbs of butter to it. I added a little more butter and cooked the potato mixture in the bacon greases and butter. They came out pretty good. I was my first stab at potato pancakes so I had a few issues cooking them, but I figured it out towards the end and the next time I make these, I'm sure they will be great!
