Tuna Dumplings

Reviewed: Dec. 23, 2012
I've made this many times and it's always a hit! Even my late mother, who became very picky about food (and often refused to eat) loved it. I can never find pimentos, so I've sometimes just chopped red peppers very fine and I've also added onions and peppers to the broth. It's super delish as it is, although the peppers and onions are delishious as well. I've found the pepper can be a bit strong and can overpower the tuna and cheese, so you might want to cut down on the amount. It's always amazing, though and I'm dying to make this for the first time for my new husband! I know he'll love it! :)

Sweet Potato Pie IX

Reviewed: Jan. 4, 2013
I made this for my first Christmas (just passed) with my new in-laws. My husband had never had sweet potato pie and was hesitant to try it, but once he did he loved it. My new mother and father-in-law each had a piece and they really loved it! I like the fact that it's not as heavy as a pumpkin pie; my mother-in-law had never had it either and said it had a "good flavour". It does make two really full pies and I had filling left over. I saved it to make some tarts with, so there's no waste. (BTW: My dogs LOVE sweet potatos and one was trying to eat the peels as I made these pies! So, I boiled two extra potatos and mashed them with their skins on to feed to the dogs. I give them a spoonful in their kibble. They just inhale it! Another way I've cooked sweet potatos for them is to cut them up and boil them in chicken broth with cut up cabbage. They just go crazy for it!)

Slow Cooker Chicken and Dumplings

Reviewed: Feb. 16, 2013
I made this using chicken thighs rather than breasts, which did change the overall colour to a gravy-like brown. Following the suggestions of other posters, I used 1 can of cream of chicken, 1 can cream of celery and added rosemary, sage and poultry seasoning. I also added 1 can of corn and only needed 1 can biscut dough. It came out delishious!!! No salt needed at all. I'm making it again, at my husband's request!! He bought cream of mushroom soup instead of the celery and I'm making bisquick dumplings to see how they come out. This is a receipe you can play with and decided what you like. It's a new favourite in my house! :)
