Jan's Pretzel Dogs

These are just fun!!! I don't have a bread machine so--mixed with a spoon until flour was incorporated. Kneaded a few times and put in a greased bowl about 1 1/2 hours to rise. Recipe makes alot of dough!! Wrapped 2 pkgs of mini dogs and used about 1/2 the dough. Will definitely make again, but will half the dough. Make sure you really pinch those ends or they will unravel in the water bath!

Red Enchilada Sauce

This was very easy and quite tasty! Used the tomato sauce(didn't have paste) Salsa was also missing from pantry-so used Rotel tomatoes instead. Continued to reduce until I was satisfied with thickness. Very forgiving recipe!

Slow Cook Thai Chicken

Jalapeno Popper Spread

This was eaten in a quick hurry. Sooooo easy. I baked it to brown the cheese, used a preshredded Italian blend I had in the fridge. You can vary the spiceness by adding more jalapenos. A must try.

Have made this several times and it is always a hit. Nobody believes there is horseradish in the sauce when they ask for the recipe. Keeps well in a warm crockpot. Kids like it too.

Slow Cooker Mashed Potatoes

I made this St. Patrick's day with corned beef and cabbage. Excellent. Made exactly as recipe. Be careful not to mash potatoes to thin because alot of moisture gained during slow cooker process. I added a little to much reserved water and they got a little runny, but they still tasted great. Very easy and a convenient way to serve potatoes when you are having company. Everything prepared ahead so you are not stuck in the kitchen.

Lemon Horseradish New Potatoes

very good and very forgiving. I cooked a little slower in the oven because I had meat along side. Very good flavor and wonderfully golden brown. I would probably use a little more horseradish next time because my husband loves the flavor.

Ham and Pineapple Dinner

I made this exactly as the recipe. I thought it was delicious, my husband didn't complain but found it a little sweet. Will definitely make this again the next time I have leftover ham. It was very quick with nice presentation.

Mashed Potato Casserole

I love this recipe. Made with no changes on several occasions. I have made this a couple hours ahead when entertaining, popped it in the oven with the rest of the meal so I could enjoy the company, and it comes out perfect every time.

Shrimp Scampi Cheesecake Appetizer

This is great!! Presentation is everything. So simple but so elegant looking. I made it in larger puff pastry shells and also in phyllo dough shells for bite size appetizers. No fail recipe. I even had some left over and put it in the freezer. Thawed,heated in a mini crockpot and served with crackers for unexpected guests!

Roast Sticky Chicken-Rotisserie Style

I followed this recipe as written. The flavor on the chicken was excellent. I was surprised at how moist the chicken remained after 5 hours. I will definitely make again, however, I will put the chicken on a rack inside the roasting pan so the bottom isn't stewing in the juices.

Crawfish Etouffee

Saw the recipe and was excited that it contained no tomatoes. My husband made this, and the result was tremendous. Made it again 2 weeks later--can't get enough. Substituted shrimp both times. The fragrance will stay in the house a couple days, however, have a candle ready!!
