Chocolate Waffles I

Oatmeal Chocolate Chip Cookies I

Yum! These are great with tea and this recipe makes a lot of cookies so you can freeze them for later. I used butter instead of shortening and milk chocolate chips instead of the semisweet.

Apple-Cranberry Crisp

Made this at Thanksgiving and it was good, not great. Keep in mind that the cranberries make it pretty tart so this is not a sweet dessert. I created more of the topping as others suggested but it didn't seem to bake completely. Was still good with whip cream on top but not a favorite.

Double Layer Pumpkin Cheesecake

Made this for Thanksgiving and it turned out good but not quite as I expected. The crust burned slightly probably bc I had to bake it much longer since I made it thicker by upping the recipe by half - put in 3 pkgs of cream cheese, 3 eggs, used 3/4 cup pumpkin puree, etc. Otherwise it would have been a thin cheesecake. It looks pretty but I think I'll stick to the regular non-layered pumpkin cheesecakes.

Laura's Quick Slow Cooker Turkey Chili

This is an easy, good and hearty recipe. As others suggested, I substitured the 2 cans of soup for 2 cans of diced tomatoes. Also substituted one can of kidney beans for pinto beans instead - just to have a greater variety. I also only included 1 tbsp of chili powder, as that is enough, and added a chopped bell pepper.

Cranberry Pistachio Biscotti

Great Christmas cookie I've made two years in a row. These are easy, pretty and delicious (especially dunking in tea). The only change I've made is to add less nuts (1 cup is enough) but otherwise the recipe is perfect! Ideal for a cookie exchange and are way better than any store bought biscotti.

Aunt Teen's Creamy Chocolate Fudge

I have made this twice and it turned out perfect and delicious! Tips I took from others: 1) add the marshmallow fluff into the pot last in step 2 so it does not burn 2) measure the chocolate chips beforehand, put them into a microwave-safe bowl and melt down a bit before adding them into the pot 3) added a full cup of chopped walnuts. I poured the mixture into a foil lined 9" round cake pan and put it in the fridge to cool. You can store the fudge in an airtight container in the fridge but it will not last long!
