Cheese Crackers

Tasty. I just made them, and am already imagining them alongside some cream of tomato soup or with an iced glass of tomato juice w/lemon, or maybe with some different dips. They were done in my oven in 23 minutes. I baked them on parchment paper, so I don't know how they'd come out on a plain cookie sheet, but with all the butter --- probably fine. One possible tip: Maybe it's our high altitude, but the cracker dough didn't "roll" into balls for me. They needed to be compressed by hand and "formed" into balls. I wondered if they would fall apart during the baking process, but they came out fine. I'm thinking of trying some pepper-jack cheese in them next time. Or some fresh chives. How about oregano or basil ? They're a fun, new treat, though.

Grandmother's Buttermilk Cornbread

This recipe doesn't really need another rave review. But, it's super. It turns out wonderfully. Restaurants should start using this recipe ! It's always good with added peppers, or spread with pepper jelly. Yummy, yummy.

Cream Cheese Fruit Dip

This is a really good dip. I just gave it a trial run, as I want to take it and a couple of other fruit dips along with fruit skewers to a neighborhood party this weekend. It's delicious, and a nice change.

Swedish Oatmeal Lace

Not for the novice baker, though, if you intend to curl them. They're delicious, but need to be handled VERY gently, especially if you're trying to curl/curve them. I just now made them, and I bake LOTS, and didn't have an easy time with getting them off the prepared pan or getting them curled on to a rolling pin or glass. If I try them again, I would just let them cool FLAT, and just be cookies, rather than rolled around anything. And I'm Swedish.

Baked Salmon II

This was fine, but I'd agree with others that it only takes 20 or 25 minutes at 375. Also, it probably doesn't need the salt or as much oil, and is maybe more tasty with either tarragon or dill instead of basil on the fish. When you have a leftover piece, the tarragon or dill flavor is very good for a salmon patty or a salmon soup.

Sopapilla Cheesecake Pie

SUPER. I thought it was even better day #2. Keep refrigerated. I made the filling with 8 oz. full-fat cream cheese and 8 oz. reduced-fat, reduced filling sugar to 3/4 c., and beat in 1 tsp. fresh lemon juice plus 1/2 tsp. lemon zest as well with the vanilla. For topping, I reduced sugar to 1/2 c. and butter to 5 T. Still a rich dessert, but tried to cut down a little. People really like it. I cut it into squares of about 1 & 1/2", so people can eat 1 or 5 or more! Lots of friends will be making this now. Thanks.

Spanish Rice II

Other than using chicken broth instead of water, we followed this recipe exactly --- It is excellent, and the leftovers are great, too. The 30 minutes turned out perfect for the covered cooking time. We serve it with a Mexican chicken salad for a light, healthy meal.

Peach Pie the Old Fashioned Two Crust Way

This is a PERFECT pie, when made with ripe summer peaches. Here in Colorado, we get some of the very best summer peaches from our Western Slope area. I followed the directions, but added no nutmeg (that's just a personal taste). Made the crust from a Betty Crocker cookbook recipe. This will be my peach pie recipe now. There's one in the oven now, to take to a friend for her birthday. Thanks!

Downeast Maine Pumpkin Bread

Outstanding, moist, lovely bread. Since my family likes cinnamon, I used 1 & 1/2 teaspoon cinnamon, and only 1/4 teaspoon each of the nutmeg, cloves, and ginger.

Taco Seasoning I

TERRIFIC TACO SEASONING This recipe, exactly as written, is all we use now. I save spice jars, pimiento jars, etc., and pack a single batch into each jar, along with the typed recipe, to give as gifts on birthdays and holidays. Friends love it. What a great find!

Cadillac Pimento Cheese

REALLY tasty cheese spread. Because of the saltiness of the cheese and the salt that's in mayonnaise, I like the spread best on bread, toast, or celery/carrot sticks. Most chips/crackers would add too much salty flavor. I like using half Velveeta and half mild Cheddar. Yum.

Easy Meatloaf

Perfect meatloaf. I made it with ground chuck and torn up French bread. I love it, and think that kids will, too. Sandwiches should be great. I've only been looking for 35 years for a really good meatloaf! This is it. Thanks.

This is wonderful, easy egg salad. Sometimes I replace the green onions with fresh chives. It's delicious both ways. We'll be having it in mini cream-puffs for an upcoming tea!

Tennessee Eggs
