Garlic-Parmesan Croutons
These are great. I used frozen left-over bread (French and multi-grain) cut in cubes while still frozan, and skipped the thyme, wanting the oregano to be the main flavor. They toasted perfectly at 325 degrees for the 15 minutes suggested. It will be interesting to see whether they last long enough to get to my soup or salad, as I'm enjoying snacking on them plain, right now.

Rich and Creamy Tomato Basil Soup
THE BEST! Since it's just early spring, I made this soup with two 28-ounce cans of San Marzano tomatoes. I left all amounts the same as the original recipe, except that I did reduce butter (used unsalted) to 1/4 cup (half of a stick). The amounts of Kosher salt and freshly ground pepper that worked well were 1/4 tsp. each. It really is excellent.

Left Over Spaghetti Lasagna
To make this, I had to cook more spaghetti noodles, as all I had leftover were homemade Italian-American meatballs -- crumbled into pieces -- and homemade marinara sauce. Also, I had no cottage cheese, so just mixed regular sour cream with a little shredded Parmesan, and added the end of a package of Cheddar to the mozzarella. It baked covered for 30 minutes, and uncovered for 10. Delicious!
