Chicken Tortilla Soup I

This was so good! I followed the recipe word for word except for a few changes. I didn't know what "hominy" was (small town girl) and I thought it needed salt in the mix. I will make it again! Thanks for sharing!

Cream Cheese Pound Cake II

I will say first off that this cake is delicious, even though cooking it was a bit amusing for me. I made some modifications that others used, almond extract and vanilla, and followed the recipe very carefully. I cooked it 1 hour in a bundt pan and checked it with a toothpick... next time I will use a whole knife as when I flipped it over, batter flowed out profusely!! I plopped it back in and baked some more. Took about 1 1/2 hours and still wasn't quite done. We ate it anyway. It was yummy:)

Bacon Chicken II

Wow. My very picky 9 year old raved about this one! I was torn between cooking and not cooking so I did both. I cut up the bacon in small pieces so it would be easier to eat and dish out. Next time I will not put the uncooked on and will partially cook all of it. I don't think it made that much difference in flavoring. I also used our favorite BBQ sauce- Sweet Baby Rays instead of honey BBQ. It was a hit with the whole family. Was great with a loaded baked potato. Next time will save some of the cooked bacon for the potatoes too!

Brownie Mallow Bars

These are fabulous. I found this recipe on the Betty Crocker website and the only difference I can see is that instead of marshmallows, I used vanilla frosting. I have had some similar with marshmallows and the frosting is much better! It stays very moist and I highly recommend it instead of the marshmallows. The rice krispies get a little stale after day 3, but they really shouldn't have lasted long. I took them to a bunch of dieting women!!

Corned Beef and Cabbage

I just made the meat without the veggies and it was delicious. My kids didn't like the flavor but the rest of us ate it up. Very rich meat. I served it with broccoli/ramen noodle cole slaw and it was a great combo! I love how tender it got in the crock pot over about 10 hours on low!!

Sausage-Stuffed Loaf

This is a hit with our freezer cooking group. My kids didn't care for the spinach, so I am leaving it out of mine, but my friend wants it to sneak in some veggies into her kids diets. I am currently making 6 of these. They freeze great and reheat easily for a fast dinner. Will be serving spaghetti sauce or marinara on the side for dipping. This is a fast and fancy meal for company dropping in for dinner.

Marianna's Marinated Pasta

I made this with dried spices, but otherwise followed the recipe (minus the lg amt of pepper). The kids loved it as the plainer the noodle the better. I found it very bland. Even parmesan didn't add much flair. I would try some garlic salt next time instead of clove.

Monkey Bread IV

made one loaf pan of chocolate chip and one with cream cheese in the middle. Cream cheese rules. I only put cream cheese in half of the tiny pieces. I also made Creamy Cream cheese frosting to dip it in. Wonderful way to end the sleepover party!

Broccoli and Cauliflower Casserole

I saw that others thought this was labor intensive, so I made a few changes for simplicity. I cooked the rice and broccoli and mixed them together, then stirred in some French Fried onions and some salt and pepper and spread in the casserole dish. In the same pan, I mixed the soup and milk and poured over the top. Then I just sprinkled some cheddar cheese and baked until bubbly and added more FF onions. (I didn't have crackers on hand.) We all loved it!

Broccoli and Ramen Noodle Salad

I listened to a prior user and added a splash of soy sauce, some garlic cloves and some cilantro and I am having a hard time staying out of it until the gathering! I also saute my raw ramen noodles in a Tbsp of butter before adding to the mix. So very, very good.

Blueberry Streusel Muffins

Wow, these are good. I did increase the sugar as recommended to a little more than a 1/2 cup and used brown sugar in struesel. However, I would not recommend putting water in the extra muffin cups as the struesel spread all over the place... but it still tasted great. Big hit with the sleepover.

Pasta with Asparagus

Like a few others, I added lots of garlic, some dill and it still was rather blah. I threw a lot of feta cheese in it and it was wonderful! It was just missing something without it.

Baked Potato Skins

These are great! I thought I would share what I did with my potato insides too.. I made Baked Potato Soup V with it and it was fabulous. (I probably should share that I made the skins for a group and I tripled the recipe, and it seemed to be about the perfect amount for the soup.) I then cooled the soup and put it in a freezer bag for dinner later on this month. It is also a great recipe and the potatoes were already cooked and bacon already fried (the 2 steps I usually do not enjoy!)

Garlic and Herb Cream Cheese

Yum. I doubled the recipe and halved the butter (1 stick total) and I think it will be gone in a flash at Bible Study tonight! I did add 4 Tbsp milk for the double recipe as someone else suggested and mixed it in the Cuisenart. Thanks for the suggestions!

So very good. I got this recipe from a friend and his recipe calls for 1 cup of sugar. I am surprised this one has so little in the recipe. I can't say I would decrease the sugar... it is wonderful!
