Peking Pork Chops

Amazing! My husband loved it so much that he even suggested I make this dish when his mother comes to visit! I used only about 1/4 cup soy sauce so it wouldn't be too salty and cooked it in the oven for 40 minutes at 350 degrees. I served the chops on a bed of brown rice with a salad. Delicious!

Ranch Style Oyster Crackers

So easy and inexpensive! Everyone always loves them. Great snack. I didn't have lemon pepper so I just added a touch of black pepper. YUM.

Orange Roughy Bundles

Very good! I didn't have zuchinni, so I used shallots and red pepper on top. I also grilled it a bit longer than the instructions say. It was very good....light flavor. So easy to make and clean up. Great summer dish!

Stromboli

Great. I omitted the sauce and served it on the side as a dipping sauce. A suggestion from a friend was to add a little yellow mustard to the dough before laying everything else on. Surprisingly the mustard gives it a good taste.

Double Tomato Bruschetta

I've never made bruschetta before and this was fabulous! I think the sundried tomatoes made all the difference. I had some mixture left over since I ran out of bread so we put the bruschetta on steak sandwiches the next day. So good! Definitely will make again.

Zesty Slow Cooker Chicken Barbecue

Yum! I added more bbq sauce and also 1/3 cup of water (my crockpot is big and tends to dry things out). I reserved a bit of the sauce and added it about 45 minutes before serving. Seemed watery, but once I shredded the chicken it absorbed most of the juice. It was perfect. Served on buns with roasted potatoes on the side. Keeper!

Orzo with Parmesan and Basil

Great! A good & different side dish. I used beef broth becuase I was serving it with meatloaf and I added some chopped garlic and dried onion while I sauteed the orzo. I didn't have fresh basil so I used dry. I saved about 2 tbsp of the broth and added it to the orzo just before serving so it wouldn't be dry as others had mentioned. I will definitley be making this again.

Neat Sloppy Joes

This turned out great. I didn't have tomato soup so I used tomato sauce. I also used ground turkey and threw in some shredded carrots. Definitely better than that canned stuff and I always have these ingredients on hand.

Italian Stuffed Zucchini

I chopped up the zucchini into big chunks and also added a little oregano in addition to the other ingredients. I baked it for 20-30 minutes. It's now one of our favorites. Another variation we like-- add extra spaghetti sauce and serve over pasta.

Mary's Meatloaf

YUM! I doubled the recipe, added ground pork and some Worcestershire sauce, cut back the brown sugar a bit for the glaze, used seasoned bread crumbs & cooked for about an hour and a half. So moist. We loved it!

Easy Lemon Cookies

My hubby loved them! I used 1 tbsp of lemon juice and some lemon zest instead of lemon extract. They were really moist and delicious. UPDATE: I made these again and refrigerated the dough for about 24 hours before I made the cookies. The dough was easier to handle after being in the frig- not as sticky. They also came out even better than the first time I made them...a bit of crispiness on the bottom and around the sides and soft inside. The powdered sugar seemed to adhere better, too. Putting the dough in the frig was definitely a good idea. These are our favorite!

Candied Sweet Potatoes

YUM! These turned out great! (Even better than my mom's.) I used canned sweet potatoes/yams. I turned the heat to high the last few minutes to carmelize them. I also added a tad more brown sugar to thicken. They were wonderful and I will make them every year for the holidays!

Ham with Pineapple

Delicious. I made this for Easter dinner with a few modifications: used ground cloves and pineapple chunks instead. I threw it all in the crockpot- first hour on high and then about 5 hours on low. Came out so juicy and tender.

Italian-Style Spaghetti Squash

This recipe was really good. We've never had or made spaghetti squash before and my husband was really leary (due to a traumatic squash incident when he was young). I combined this recipe with the Spicy Spaghetti Squash recipe from this site. I cooked the squash in the microwave for about 16 minutes and halfway thru flipped over the halves and put a tbsp of butter into each half with some garlic power and some salt and pepper. I ommitted the capers and made the sauce using 2 cans of diced tomatoes, red wine, onions, green peppers and zuchinni. Next time I will drain one can of tomatoes before I add it-- the sauce was slightly watery. The squash itself doesn't have much flavor-- it is slightly sweet so adding some red pepper to the sauce and salt and pepper was definitely a hit with my husband. He really liked it and said I should make it when his parents come to visit!

Slow-Cooker Chicken Tortilla Soup

Very good. The only thing I changed was adding 2 cans of chicken broth instead of water. I threw the chicken breasts in frozen. It was perfectly done when I came home from work. Very tasty-- I will definitely make again.

Spiced Nuts II

These are very good. I would cut back a bit on the cooking time, they tasted like the sugar burned slightly. I added dried cranberries instead of raisins.
