Spicy Spaghetti Squash

This recipe was really good. We've never had or made spaghetti squash before and my husband was really leary (due to a traumatic squash incident when he was young). I combined this recipe with the Italian Style Spaghetti Squash recipe from this site. I cooked the squash in the microwave for about 16 minutes and halfway thru flipped over the halves and put a tbsp of butter into each half with some garlic power and some salt and pepper. I ommitted the capers and made the sauce using 2 cans of diced tomatoes, red wine, onions, green peppers and zuchinni. Next time I will drain one can of tomatoes before I add it-- the sauce was slightly watery. The squash itself doesn't have much flavor-- it is slightly sweet so adding some red pepper to the sauce and salt and pepper was definitely a hit with my husband. He really liked it and said I should make it when his parents come to visit!

Beef Tips and Noodles

Overall this is good. Needs a few adjustments. I used low sodium mushroom soup and about 1 1/2 tbsp of dry onion soup and it was still very salty. Next time I will probably cut back even more on onion soup. Didn't seem to make enough sauce, next time I'll add a bit more water or try milk like others suggested. Added lots of black pepper to it-- it was good and I'd make it again.

Party Punch IX

I scaled down the recipe to just one pack of jello-- just to try for my husband and I. I only added about 1/3 of the sugar and froze the jello mixture in ice cube trays and muffin tins....easier for single servings. Even that made alot so I'm just going to store the cubes in my freezer for a treat anytime. This would be great for a party and you could probably freeze it into a ring to look pretty.

Zesty Slow Cooker Chicken Barbecue

Yum! I added more bbq sauce and also 1/3 cup of water (my crockpot is big and tends to dry things out). I reserved a bit of the sauce and added it about 45 minutes before serving. Seemed watery, but once I shredded the chicken it absorbed most of the juice. It was perfect. Served on buns with roasted potatoes on the side. Keeper!

Sesame Tilapia

I thought this was great! I cut down the sesame oil by half and added some italian salad dressing to the marinade. The fish cooked in less than 30 minutes. The sesame oil delivered a different aroma, but I thought it was really light and tasty. My husband liked it but said that it had an unusual aroma. We'll definitely make this again!

Broccoli Chicken Divan

I cut back on the milk and added a tbsp of lite mayo to make it creamier. I also added some black pepper and paprika to the soup mixture. Italian bread crumbs added a good flavor. This is a keeper and it's so simple!

Yum-Yum Corn

I gave this a 3 because my husband liked it. I thought it was ok. I followed the recipe as listed and cut back a bit on the sugar. The cream cheese- butter mixture came out "bumpy" not creamy. Maybe it's because I used the whipped cream cheese. I'm not sure if I will make this again.....I'd probably opt for regular corn over this.

Orzo with Parmesan and Basil

Great! A good & different side dish. I used beef broth becuase I was serving it with meatloaf and I added some chopped garlic and dried onion while I sauteed the orzo. I didn't have fresh basil so I used dry. I saved about 2 tbsp of the broth and added it to the orzo just before serving so it wouldn't be dry as others had mentioned. I will definitley be making this again.

Neat Sloppy Joes

This turned out great. I didn't have tomato soup so I used tomato sauce. I also used ground turkey and threw in some shredded carrots. Definitely better than that canned stuff and I always have these ingredients on hand.

Lemon Pepper Shrimp with Mustard

We didn't really enjoy this. I used some lemon pepper marinade and I think that was the mistake. There was also hardly any sauce and I found it to be pretty bland. It was just ok.

Easy Lemon Cookies

My hubby loved them! I used 1 tbsp of lemon juice and some lemon zest instead of lemon extract. They were really moist and delicious. UPDATE: I made these again and refrigerated the dough for about 24 hours before I made the cookies. The dough was easier to handle after being in the frig- not as sticky. They also came out even better than the first time I made them...a bit of crispiness on the bottom and around the sides and soft inside. The powdered sugar seemed to adhere better, too. Putting the dough in the frig was definitely a good idea. These are our favorite!

Cranberry Sauce II

This was a bit sweet for our taste. Next time I will cut back on the sugar. Mine also came out a bit runny-- not sure if it will thicken up in the frig (although it's been in there 24 hours now). I may add less water, too. I think with these revisions it will be great.

Balsamic Glazed Carrots

This was a good variation to steamed carrots. I boiled them for about 2 minutes first and then followed the recipe. I used a pepper balsamic vinegar which gave it a subtle kick. I also added a squirt of maple syrup. Nice change for carrots, will make again.

Cider Vinegar Chicken

I didn't have garlic salt so I used some celery salt and garlic powder. I also added some red pepper flakes because we like spicy food and added a bit of water to cut down on the tang of the vinegar. Overall, I think it's a great recipe for chicken...not your everyday flavor!

Italian Stuffed Zucchini

I chopped up the zucchini into big chunks and also added a little oregano in addition to the other ingredients. I baked it for 20-30 minutes. It's now one of our favorites. Another variation we like-- add extra spaghetti sauce and serve over pasta.

Pepper Salad

Too sour! The peppers shrunk down and became mushy and the lemon juice dressing was almost too sour to eat. Might be good with a different dressing, maybe italian or balsamic vinegarette.
