Mary's Meatloaf

YUM! I doubled the recipe, added ground pork and some Worcestershire sauce, cut back the brown sugar a bit for the glaze, used seasoned bread crumbs & cooked for about an hour and a half. So moist. We loved it!

Microwave Apple Crisp

This was good for a QUICK crisp, however the topping did not come out "crisp". It was more chewy than crunchy and crisp. Good for a quick dessert.

Pork and Corn Stuffing Bake

This is really good. I used cream of chicken, but would probably be good with cream of mushroom, too. Next time I would saute the onions to give them a milder taste-- the onion was really strong in the stuffing. I didn't add corn because I didn't have any. I would definitely make this again. The sauce on the chops is delicious!

Mushrooms and Peas Rice

YUM! It came out great. I sauteed and added onion and garlic. I also used canned mushrooms and saved the juice to add a bit at the end to make the rice more creamy. Good flavor!

Easy Pumpkin Muffins

These muffins are so moist and delicious. I used spice cake so I didn't add any of the spices in the recipe. Sprinkled some brown sugar on top before baking. My family loved them and they are super easy to make.

Spinach and Sun-Dried Tomato Pasta

Delicious. Next time I will omit the pine nuts...personally don't like how they taste with the pasta. Otherwise I wouldn't change a thing. Very good and east to make!

Orange Roughy Bundles

Very good! I didn't have zuchinni, so I used shallots and red pepper on top. I also grilled it a bit longer than the instructions say. It was very good....light flavor. So easy to make and clean up. Great summer dish!

Great. I omitted the sauce and served it on the side as a dipping sauce. A suggestion from a friend was to add a little yellow mustard to the dough before laying everything else on. Surprisingly the mustard gives it a good taste.

These are very good. I would cut back a bit on the cooking time, they tasted like the sugar burned slightly. I added dried cranberries instead of raisins.

Roasted Nuts

These are good. I didn't add the whole packet of ranch dressing because I thought it would be too salty...it wasn't. Next time I'll add the whole packet. Good flavor! UPDATE: They taste really good if you save a bit of the ranch powder and mix the nuts into it after they've cooked. It punches up the ranch flavor. I also cut back on the maple syrup.

Candied Sweet Potatoes

YUM! These turned out great! (Even better than my mom's.) I used canned sweet potatoes/yams. I turned the heat to high the last few minutes to carmelize them. I also added a tad more brown sugar to thicken. They were wonderful and I will make them every year for the holidays!

Chicken, Garlic, and Sundried Tomato Pasta

My husband loved it. I liked it, however it was a bit rich. I sauteed some red onion and zuchinni with the garlic. The sundried tomatoes were the best part.

Slow-Cooker Chicken Tortilla Soup

Very good. The only thing I changed was adding 2 cans of chicken broth instead of water. I threw the chicken breasts in frozen. It was perfectly done when I came home from work. Very tasty-- I will definitely make again.

Double Tomato Bruschetta

I've never made bruschetta before and this was fabulous! I think the sundried tomatoes made all the difference. I had some mixture left over since I ran out of bread so we put the bruschetta on steak sandwiches the next day. So good! Definitely will make again.
