German Potato Pancakes

Baking Powder Biscuits

These biscuits are terrific. I find they make excellent drop biscuits as the moisture is too much for rolling. But my husband loves them this way. I tried reducing the moisture and rolling them out but he prefers the original recipe! Yum!

Beer and Brown Sugar Steak Marinade

This recipe adds an excellent flavor to a not so excellent cut of beef. I used a lighter beer since it was all I had, but got rave reveiws from my husband and brother in law. This is excellent with sauted onions.

Fluffy Whole Wheat Biscuits

While these biscuits say "Whole Wheat" they should say "Wheat". Whole wheat is when one uses ALL whole wheat flour. I used 2 cups whole wheat pastry flour and 1/2 a tsp more of baking powder and these turned out great!! The family gobbled them up.

Jo's Rosemary Bread

I made this for my family tonight and we ate the whole loaf! I did cut back the rosemary to 1.5 tsp since my husband doesn't care for it. I also ground it up with a mortar and pestle. I added a little wheat germ too. Delicious!

Aranitas (Shredded Green Plantain Patties)

These are terrific! My daughters loved them and called them "banana fries". I have never used plantains before. They are difficult to peel but I figured out a good way. Cut the end off and slice down the length of the plantain. Then peel the cut edges apart. For this recipe it says gather about two tablespoons together...Squish them together into a little ball. They will stick together and still make the 'legs' of the aranita. Fast and easy!

Light Fruit and Nut Granola

This was excellent. I added dried cranberries to the mix and substituted slivered almonds for the pecans. I used about half the sugar. Otherwise I followed the recipe and it was delicious. I think next time I make it I will substitute honey for the syrup (just a preference) and add different seeds and nuts. A terrific base recipe for light and healthy granola!!

Baked Chicken with Peaches

This was a HUGE hit with my family. I took the advice of other reviewers and marinated the chicken first (teriyaki, lemon juice and garlic) then followed the recipe exactly as written. Next time I will probably brown the chicken each side briefly before baking.

Spooky Halloween Eyeballs

These are so fun! The kids love them. I only gave them four stars becuase they were a bit difficult to make. I took several suggestions from different reviewers. I used natural peanutbutter, froze the truffles before coating them with chocolate and used toothpicks in each truffle before freezing to use as a little handle to dip with. It was still rather tricky. But, they turned out super creepy and look terrific. I will probably go through the trouble again next year and get more practice!

Fry Bread Tacos II

This was very tasty! I followed some of the other suggestions and made my frybread a little smaller and thinner. It was easy to make (my 4 year old helped roll out the dough). We will make this again!

Bacon Cheeseburger Upside Down Pizza

This was easy to make but not all that flavorful. Personally I think it would be better to put all the bacon on top rather than mix it in. That might improve it. I'll keep it and maybe make it again sometime.

Creamy Orange Chicken

If you like a very delicate orange flavor then this recipe as it stands is for you. My family and I enjoyed it but were a little disapointed. I will try it again with some additions. Perhaps some orange juice concentrate and adding a splash of the orange liqueur at the end of cooking. On the whole a nice recipe but it "needs something" as my husband said.

Coq au Vin

This is the first time I have made Coq au vin. I took the suggestion of others here and cooked up some bacon and browned the chicken in the renderings. I have to say I was a bit disapointed in the results of this recipe. The sauce didn't have much depth and while the chicken was tender it was not very flavorful. I think I will try this again sometime but not use this recipe.

Parmesan Chicken Pasta Pie

This is a true despiration dinner. It was very easy to make and filling, but not too tasty. The bacon plus the parmesan cheese made it too salty. I added a cup of frozen peas to give it more visual interest and make it more of a one dish meal. My older daughter who loves Pasta Roni did not like this. I will not make this again...even in despiration. The only reason I gave it three stars is it was ready in 1/2 an hour and was easy clean up.
